Sweet Rainbow Delight
(Serves 6)
2 apples, grated
2 carrots, grated
2/3 cup shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts
Toss all ingredients together in a bowl and serve.
Variation: Add chopped
dates instead of raisins.
