Blueberry Barley Breakfast
Makes 2 cups
This is a delicious way to enjoy leftover Brown
Rice and Barley.
1 cup Brown Rice and Barley, hot
or cold
1 cup blueberries, fresh or frozen
1 cup fortified vanilla soymilk or rice milk
3 tablespoons maple syrup
Heat Brown Rice and Barley if desired, then add blueberries, milk,
and maple syrup. Stir to mix.
Per 1/2-cup serving: 162 calories; 4 g protein;
35 g carbohydrate; 1 g fat; 4.5 g fiber; 87 mg sodium; calories
from protein: 9%; calories from carbohydrates: 84%; calories from
fats: 7%
