Spinach Salad with Curry Dressing

Makes about 8 cups

This colorful spinach salad is a happy marriage of flavors and textures. It is especially easy to make if you use the prewashed spinach that is available in the produce departments of most supermarkets.

1/3 cup peanuts
1 tablespoon sesame seeds
1 bunch fresh spinach, washed or
1 6-ounce bag prewashed spinach (about 6 cups)
1 tart green apple, diced
2 green onions, thinly sliced, including green tops
1/4 cup sultana or golden raisins
3 tablespoons seasoned rice vinegar
3 tablespoons frozen apple juice concentrate
2 teaspoons stone ground or Dijon mustard
1 teaspoon reduced-sodium soy sauce
1/2 teaspoon curry powder
1/4 teaspoon black pepper

Preheat oven to 375oF. Spread peanuts and sesame seeds in an oven-proof pan. Bake until lightly browned, about 10 minutes. Cool.

Combine spinach, apple, onions, and raisins in a large salad bowl. Add cooled peanuts and sesame seeds.

Whisk vinegar, apple juice concentrate, mustard, soy sauce, curry powder, and black pepper together in a small bowl.

Just before serving, pour dressing over salad and toss to mix.

Per 1/2-cup serving: 45 calories; 1 g protein; 7 g carbohydrate; 2 g fat; 1 g fiber; 136 mg sodium; calories from protein: 11%; calories from carbohydrates: 56%; calories from fats: 33%
