Crostini with Sun Dried Tomatoes

Makes about 20 slices

These tasty treats are great to serve at a party!

6 sun-dried tomato halves
2/3 cup roasted red peppers (about 2 peppers)
1 garlic clove, crushed
2 tbsp freshly chopped basil or 1 tsp dried basil
1/8 tsp black pepper
1 baguette or Italian loaf, cut into 1/2-inch thick slices

Pour boiling water over the tomatoes and set aside until softened, about 20 minutes. Pour off the water and coarsely chop the tomatoes. Place in a mixing bowl. Chop the roasted red peppers and add to the tomatoes, along with the garlic, basil, and pepper. Preheat oven to 350 degrees. Place the bread on a baking sheet and bake until crisp and lightly brown, 10 to 15 minutes.
