Apple Chutney
(Makes 3 cups)
1-1/2 pounds tart apples (about 3 large apples)
1 medium garlic clove, minced
1 tablespoon chopped fresh ginger or 1/2 teaspoon ground ginger
1/2 cup orange juice
1 teaspoon each ground cinnamon and cloves
1/2 teaspoon salt
1 cup raw sugar or other sweetener
1 cup cider vinegar
1/4 teaspoon cayenne, or more to taste
Coarsely chop the apples, then combine them with all the remaining
ingredients in a heavy saucepan. Bring to a boil, then lower heat
and simmer uncovered, stirring occasionally, for 1 hour, until most
of the liquid is absorbed.
