Passover is rapidly approaching. I started my "kickstart" program prior to the actual start date (just the impetus I needed). It has now been 3 mos of totally vegan and loving it.
However, I keep Passover and therefore can have no grains or beans...any suggestions?
If you're looking for substitutes for starches, I'd go for root vegetables like sweet potatoes, potatoes, rutabagas, parsnips, carrots, etc. you can probably have quinoa as a grain substitute, since technically it is a seed and not a grain.
In curiosity, I don't know much about Judaism -- I know you're not supposed to eat anything with yeast in it, but why can't you have any grains at all? I was under the impression that you could have unleavened bread. And why no beans?
