Thank you. I have been vegan since December 27. I feel great and even better about doing my help to save animals. I love it and will never change.

Love being on the program. I've never felt better and am enjoying the new foods and cooking experiences so much. Best to all the newbies and returning alumni. Doing this once just makes me want to do it again!

I have a lot of weight to lose. Like, a lot. I'm doing the Hill Country Ride for AIDS at the end of April & if I'm riding 45 miles, I need to be much, much lighter. So I go to the gym virtually every day, and sometimes I'm there for 2 hours. When I'm done I need a snack, and it needs to already be in my bag. So what is a good vegan, maybe even raw, post-workout snack? My stomach is screaming "feed me!!" like the plant in Little Shop of Horrors, I need something filling but not fattening, and I'm not really a sweet-eater - salty/savory is my thing. Any suggestions?

How about a combination of nuts and raisins? Or celery with peanut butter, I love peanut butter and banana sandwiches.

Not really salty, savory, but I also like Larabars. They are vegan and most flavors are about 80 - 90% raw. They do have one that is a cashew "something" I don't remember, but it's not real sweet. I almost always have one with me so I have something to resist other temptations if I get hungry. They're very filling.

Hope that helps.

I have been eating vegan since Feb 1, and am excited about this program to help me stay on track, get new recipes and meal ideas, etc. Looking forward to it!

I have been planning to start the vegan way of life for a long time now. I have already printed out some awesome looking recipes and am planning to start now. I have a daughter who is not committed, but will eat some things, so I am hoping she will see my results and want to do this too.
Good luck everyone.

Hiya!

You might also try the standard GORP - Good Ol' Raisins & Peanuts - many gorps also contain chocolate - but please, make sure it's vegan. Other dried fruits are good, too, as are other grains, and even pretzels! I make my own pretzels, by the way. Also, bananas are very good for keeping up your K levels.

Oh, I've been a veggie since 1989, and nowadays, mostly eat vegan. These next few weeks, I will be, even though my mom (I'm her caregiver) like to eats in places that just are not conducive to a vegan diet. I just do not like iceberg lettuce salads....

Did anyone hear of the recent report that said that animal farming creates almost 51% of CO2 human created emissions?

Let's have fun! Blessings... Jessie

I've returned to a plant based diet for the last 20 months, and have never felt better. I created a blog as a way to share recipes, restaurants and basic information, primarily for those who are considering bringing more vegetables into their lives, or maybe even dipping their toe in the vegan world.

To my complete joy and surprise, I've had 28 people contact me to say they joined the March kickstart. Out of those, only 8 considered themselves vegetarian. I'm over-the-moon, and so excited to share this experience with everyone.

Hi everyone. I was onboard for the January kickstart (as *s*h*a*n*n*a), but have decided to change my username to a nickname. Just for privacy reasons since the forums are getting so big now. Smile

I've set some new goals for March, and have brought some friends along. Ready to go!

I'm a member of zootoo.com - all about animals. Last Aug. one member launched a "30-day Challenge" to go vegetarian starting Sept. 1st. We were challenged to "meet our meat" and become aware of the inhumane treatment that occurs in factory farming. I did my "homework" and saw things that will never leave my mind. I didn't wait - went veggie on Aug. 4th, and decided it was crazy to stop there. I've been a proud vegan since Aug. 15th. I wasn't a big meat eater, but work in a Subway restaurant. Meat everywhere! My husband thought I was nuts. I made the change for the animals and the environment, not for better nutrition. Cheese was the hardest thing to give up for me, but I've found some wonderful vegan cheese alternatives. I'm in love with tofu and edamame!! I've been a couch potato for many years, and without changing anything in my lifestyle except my diet, I lost 30 lbs. in about 4 months! After losing another 6 lbs. I've been holding steady. I figured a couch potato needs to start slow, so I bought Richard Simmons' "Sweatin' To The Oldies" 5-CD set (NOT ready to tackle a gym). I'm 57 and knew the music would get me motivated. I've just started and am having a blast! Yes, the first week or two will be challenging for you, but I've never looked back. I've had such fun discovering new things and feel great! Am sure that it was easier for me because I was already a veggie and salad lover. I joined this challenge to see what new things I could discover from all of you. Good luck everyone!

Hello! I was reading some vegetarian / vegan blogs this morning and saw the January announcement for the 21-day vegan kickstart and by clicking the link discovered a new program was beginning March 1. Lucky me!

I was a pescatarian for three years, then vegetarian for the last four years. Last week, after doing a January cleanse and removing dairy from my diet, I realized I was just an egg away from being vegan, so I've been following a vegan diet for one week. I'm sure this program will be very helpful during this transition!

This is round two for me....and I love the "side effects" this has. I have not been sick, my skin looks fabulous, I have lost body fat (with the help of exercise too) tons of energy, p.m.s. GONE, stopped snoring, and best of all I feel like I have a clearer mind. Plus I have learned to love cooking.
Good luck everyone! You won't regret this journey to a better you!

Hello from Arizona!!

Been vegan for about 9 months now and have never felt better. Ive easily lost 30 pounds of fat eating a rainbow of foods that truly bring me joy.

I wanted to suggest that people out there search out a local farmers market for buying fresh organic produce from a real farmer. (imagine that) It will make you feel great to support local community farms and the produce available will be unlike anything you can get from a grocery store.

Also, try to avoid "packaged" foods and do all of your own cooking. I have reduced our household waste by about 90 percent by avoiding buying things in packages - cans, bottles and boxes. We return all of our vegetable scraps to our backyard compost bin made from old city trash receptacles with the lids on them and punched with holes for aeration.

Good luck to all and good health.

I'm going to be starting on Mondy... first time for all of this - looking forward to it but wish me luck. Looking over the menu for next week.. what does Kickstart DIY: couscous, lentil, and kale meaN?

RE: Welcome!

couscous, lentil, and kale meaN?
Sunshine-
Lentils are a high-protein pulse that is dried and then soaked and cooked before eating. There are several varieties of lentils, including green ones and smaller orange ones, which are typically sold split.

Kale is a hardy cabbage of a variety that produces erect stems with large leaves and no compact head

couscous is a type of North African semolina in granules made from crushed durum wheat.

I include all of these in my diet and love them.
