Hubby had a brainstorm!

We were at my company's annual holiday party last Friday night. Among the appetizers during the cocktail hour were little beef Wellingtons (meatball size, not full on size). In pondering tonights dinner, he decided on making bean Wellingtons! He's going to take some beans (that we already have cooked), some mushrooms, probably some onion and/or garlic, and make up little meatball type patties (basically a riff on the black bean patties in the Veganomicon) and wrap them up in little pockets of whole wheat dough to bake. Then he's going to come up with some sort of gravy or dipping sauce(s) to pair it with.

So, now we're revising a 'classic' Old World cuisine to be meatless Very Happy

He's also said that he never thought he'd like lentils so much - he's on his way to being a "level 7 vegan" Laughing

Hubbys with brainstorms are the BEST! Mine always has great ideas..
Over the weekend I tried a new whole wheat pizza dough and LOVED it. Even non-vegans loved it.. i found a vegetable hater who ate veggies on this whole wheat crust and asked for another slice of no cheese pizza!!

now it does use white flour too.. i used unbleached. I also used unrefined sugar, and the yeast made for whole wheat bread dough.

Yes, hubby's that cook are wonderful!

We had pizza last night - we do a whole wheat crust, no white flour, just freshly ground wheat. We generally use agave when working with yeast doughs that need something to get the yeast going. Works great.

Last night's pizza did have cheese on it - spinach, onions, mushrooms, and homemade pasta sauce (a can of diced tomatoes plus our own homemade pesto - I guess that had a little parmesan in it - run through the blender to make a sauce).

What I'm finding though, in this interim between the kickstarts is that I am better able to avoid 'problematic' stuff (like high carb sweets) if I am also avoiding animal products for the most part (the one exception seems to be Greek style yogurt).

Hi Deb,
Yes i have been really good between kickstart too. I am not craving meat at all; knowing about factory farming is all it took. Same thing with cheese & eggs.

I guess i won't try that greek yogurt. Sounds too good. I haven't tried the soy kind yet. I find i like unsweetened soy milk MUCH better than 1% or skim (water) milk.

It is great not to crave sweets anymore.. THis coming from the girl whose motto used to be, "give me the candy and no-one will get hurt" lol.

I have had some interesting cooking sessions. I found an low-fat applesauce chocolate cake that my hubby says is the BEST chocolate cake "ever". Wondering how to get away from the powdered sugar i used for the frosting.. unless i make it myself.. not sure my blender will do that.

The factory farming thing isn't as big a deal here - we were already getting free range eggs and such prior to the kickstart (I can't eat eggs anyhow - digestive bleh) and we had been doing the DASH plan so meat was low on the list to begin with. Most of the cheeses we use are made on small organic dairy farms (being in New England means all that lovely Vermont cheese! We've got access to all sorts, even raw organic goat cheeses)

I can't do soy milk - too much soy at one time for my system. We get unsweetened almond milk and sweetened vanilla almond milk (which is nice for baking).

I do still love chocolate - not craving level but enjoyment. We have a lovely (but expensive) organic vegan Beligan chocolate shop not too far from us so we'll go there a few times per year and 'indulge'.

Are you making a frosting frosting (margarine, sugar, etc) or a glaze (powdered sugar and liquid)? If it's more like a glaze, you might be able to do a chocolate variant with liquid (soy milk for example) and cocoa powder with just a hint of the powdered sugar (or maybe another sweetener - you'd have to experiment) to cut the cocoa powder. One of the key things is whether it's supposed to stiffen up or stay a bit soft.

I used unsweetened soymilk instead of hot water.

This recipe has unsweetened chocolate squares, vegan margarine, hot water (soy milk), powdered sugar & vanilla. I didn't let the frosting cool much.. put it right on a cooled cake.
One thing.. After putting this in the fridge... the frosting got very stiff and was almost like fudge.. very good.

Humm they mention purchasing vegan powdered sugar.. perhaps i will look for that. I am sure I can find it.. for a price. ~sigh~

I am considering trying the applesauce choc cake with vegan german chocolate frosting... oh my.. pecans, coconut yummm.
Anyway... i get one piece then it goes into the freezer. Honey eats them frozen. I don't bother. One is enough. THe only reason i made this over the weekend was it was for his birthday celebration.

Haa haa i tried to make lazagna..cheese was tofu & nutrional yeast.. i think i put a bit too much yeast in.. cause it tasted like parm cheese.. little less next time. I was really wondering if we would have to toss it and go out to eat.... whew the flavors came together and honey said it was great.. WE will see. I have to keep looking for a recipe.

Yes there are other milk's besides the soy.. honey loves the chocolate almond milk.. i just tend to stay clear due to the sugar.. i am looking for vegan choices to be healthy choices.
He doesn't need to be concerned. He runs 6-8 miles per day & lifts weights.. a hottie at any age.

There is unsweetened chocolate almond milk, as well as the sweetened. Hubby and son use the sweetened vanilla most of the time, I use the original unsweetened.
