What is your food today Wed Feb9th?

Hi All,
It finally stopped snowing for a few days... my sister who lives in Texas sent me joke. I wish i could post pictures here... basically it was a large pile of snow.. with maybe 7-8 mittens sticking out the top.. at the bottom it said, "wave if you have enough snow." That's about the way i feel! in a few weeks it will start melting... now weare going thru a cold spell... near zero weather..

todays food is easy..
coffee with organic unsweetened soy milk.
b-cereal
l-cream of asparagus soup & moroccan chickpea salad
d-new stir fry!!

last night at the library there was a meeting..someone brought a HUGE veggie platter from the store... while all the dip was gone there were hardly any veggies touched. In fact it looked like they had used the dip for something else... Oh the pretty colors!! So i have an amazing stir fry planned for tonight.. culiflower, brocc, red peppers, green peppers, carrots, celery, cherry tomatoes, tempah.. wow..!! so good..
and there were still enough veggies to leave so people at work could munch today if they want.

b: toasted homemade whole wheat bagel with all fruit raspberry jam - yes, that's not my usual but I had to get blood drawn (fasting blood work) on my way to work so I needed something easier and more portable than my usual cereal

l: leftover mac'n'cheese'peas,tossed salad, clementine

d: either chili or quesadillas depending on what hubby decides to do (quesadillas would mean making tortillas, chili doesn't)

s: apple, banana, clementine

Stir fry is a great idea. All those veggies sound so pretty. I love it when my food not only tastes great, but also looks good enough to photograph. Razz

b: the usual (hash browns, spinach, onions)
s: a bit of leftover beans, greens on pieces of tortilla
l: baked potato and sugar snap peas
s: fruit (I have melon and an apple)
d: Stir Fry! Thanks for the inspiration. I have leftover brown rice, and broccoli, carrots, asparagus, onion, yellow squash, red peppers... maybe mushrooms.

MMmmm yeah - we haven't had a stir fry in a while, weren't as fond of how it tastes when it was made using veggie stock (compared to a little peanut oil). I'll have to discuss it again with 'the chef' and see what we can do.

you know.. i should read the blog before i cook.. i could have used veggie stock to stir fry! i am so used to some type of sauce...garlic sauce, a premade stir fry sauce... tonight i used water to start them and then mixed in about 2 tsp Thai STyle Chili sauce.. spicy..2 tbs has 90 calories w/10 from fat. and 18 g of sugar. i could have just used regular ole veggie stock and left it at that..

with the stir fry we had gardein hot wings and brown rice.. we also put some pineapple in the stir fry...

we weren't too crazy on the cherry tomatoes in the stir fry.. might leave them out next time.
