Chunks of dead animals in my shopping cart

Had just about talked myself into going back to meat-eating. Making out my shopping list for tomorrow's trip to supermarket, I couldn't bring myself to put meat on the list. Visualized what that stuff looks like, and SMELLS like in the market, decided to stay vegan.

I make the best cheeseburgers in the world, scramble eggs better than anyone else....... I'll keep that in memory only.

I recently bought a new cookbook to feed my cookbook addiction.

With these ideas I am quite confident you can reign supreme on another burger!

If you experiment with scrambled tofu (if you eat it) you will also find with a few seasonings, tumeric for color, etc... you will also remain best ever in a scramble.

Branch out and spread your culinary wings - if you were the best in one, it simply means you can reach the best in the next. You didn't start out making the best cheeseburgers and scrambled eggs, you had to learn a few tricks first. This won't be any different! You will succeed!

Good news all around!!

now perhaps you can make the best bean burgers or the best chili of anyone!! or the best soups... so many to choose from...which one to start with???

tofu scramble anyone?

since you are going to stay vegan (yippee) might as well make it tasty!

Stay strong and keep visiting this site for support.It's tough sometimes, but you'll get through it.

Try your best to prepare your meals ahead of time, because majority of the time that seems to be the reason a lot of people give up. Find easy yummy substitutes.

I used to love bacon in the past, sad I know. Day in day out I would think of giving up. I had such a hard time finding that perfect crunchy salty flavor that I so much craved. Well, after trying various items and recipes, I finally found the one.

Raw bac-un (bacon) made from eggplant on a dehydrator.

Ingredients:
1 large eggplant
¾ cup olive oil
¾ teaspoon paprika
¼ teaspoon cayenne
2 tablespoon agave nectar (or raw honey)
4 tablespoon Ume Plum Vinegar
Salt to taste (optional)

If you salt and slightly over toast pumpkin seeds (so they've got a bit of crunch/crisp), they are very like the bacon bits used on salads and such.

How thick to you slice the eggplant prior to dehydration? How long do you marinated? How long to dehydrate? I gave up bacon (the pig stuff) about around 22-24 years ago (it was the first meat I gave up) and I LOVED Morningstar Farms bacon for many years on a BLT, but Celiac doesn't allow that one bit, so this would incredible if it scratches that itch and I could use it on a BLT with GF Breads... THANK YOU!

It's not my recipe but I'm guessing you'd want to get it pretty thin - the way you'd want thin crispy bacon. I suppose if you prefer a thicker slab type bacon, you'd cut it thicker.

Yes I would imagine it would need to be very thin to get a good crunch to it. I have tried to make banana chips in the past, but they never ever got crunchy!

I'm wondering if somewhere in our future is a food dehydrator. A water canning set up is probably ahead of that on the list but making our own dried fruits when they're in season to make them last longer would be awesome!

I have a lovely one in my storage (where ALL of my belongings still are nearly 10 months later!) but I have HUGE hopes of reclaiming it all in June. I will then down size dramatically by donation and live the simple life I love!

Update, and eating my words (causes major indigestion). Got on the scales yesterday, saw 94 lbs., totally lost it at that point. I didn't buy meat from the meat department but did buy a roast beef sub from the deli. Ate it for dinner.

Major migraine this morning, first in months! Aha! Now I've learned something.

Back to vegan eating, with a focus on calorie dense foods.
