New and Excited!

Hi Everyone! I'm really excited to start this 21 Day program. I've even started having all vegan lunches the last couple of weeks just to get some momentum going. I did go vegan for about 4 or 5 months a few years ago. I did well with it, but time and money threw me off track. I can look back though and know I still could have done it, I just got lazy. Now I'm ready to try seriously and cannot wait for the program to start. Look forward to doing this with company this time! Smile

I am new and excited too. I am hoping that having this community here will help me stick with the program. I have lived dairy free before and know I can do without the meat. Can't wait to look and feel my best in 3 weeks!

I was new for the Sept 10 kickstart.. but i am still excited!! Welcome.

Good Morning, I'm new and excited also. I'm blessed to have support, my husband and dtr are also trying the 21 day kickstart with me. I've cleaned out the cupboards and the fridge. Menu and grocery list made, time to go shopping.

I am new as well... and excited but not really sure about all this. Trying to keep a positve outlook and see 'problems' as a way to do better, rethink old habits. I am happy for the message board , I need the support and ideas. I am really happy to see that this is offered more then once.... I think it'll get my feet wet but I know that it's not just a one time do it or lose it thing.

Hey Deb! What kinds of "problems" are you running into/anticipating? There are lots of experienced folks here who have been vegan for years who can help (and maybe I can throw in my two cents too - seeing as we share a name and all :lolSmile

Hey Deb! What kinds of "problems" are you running into/anticipating? There are lots of experienced folks here who have been vegan for years who can help (and maybe I can throw in my two cents too - seeing as we share a name and all :lol

I worry that I won't like the foods, that I'll miss things, that my family won't like this and how tough will it be to make the switch. Will there be easy to grab foods? what will I eat out??
When I see a recipe for a polenta cake with a few veggies/beans on top I know that is not going to fill up my teenagers.

I haven't told anyone that I am doing this, kinda sneaking it in and seeing if they notice. I know it'll be better for all of us, I just don't want to get frustrated and ditch it because I run into obsticals.

Deb whew.. don't worry.. as you stick with this you will find things that will fill up the family.. and taste good.
I gotta say, when i started it was a little rough... some of the food we didn't like..my husband complained that everything i made was like baby food.

Now things are different. I still cook low fat, have found great recipes.. even to the point where people ask me for recipes....like after every meal... in fact mom was here last night, and this is what she posted to facebook... "Did some grocery shopping yesterday and then went to Cindy's for supper. She made delicious vegan tacos. KG also let me try some veggie burgers that she made for him. They were good enough that I could eat them at least once or twice a week-wouldn't even miss the beef. KG said that Cindy is such a good cook that he doesn't even miss the meat."

Let me tell you my first few batches of veggie burgers were.. well etable and just ok. I am getting better at them. This last batch my husband (kg) is eating them breakfast, lunch and dinner. I knew i could do better than bocca.. those things are like cardboard compared to mine.

anyhow..once you find what your family likes it will be a piece of cake & super healthy. it can take some time. Don't give up. Go ahead and try the kickstart then you can fine tune.

eating out? pizza without cheese... many chinese places will cook tofu & mixed veggies with any sauce you like. jUst tell them no animal products.. eggs go in quite a few things.. you might even have to say no animal products, no beef broth, no eggs, no dairy. I just now... 7 months later than going vegan discovered the chinese food tofu. I ordered tofu w/mixed veggies in a hot garlic sauce. yummmmmm my old fav was beef & broc in hot garlic sauce. This is better.

quick? hummm well vegan power bars.. or something you have cooked that is left over. I cook 1-2 days a week and eat leftovers .. oh take some confetti couscous salad with you... or a hummus sandwich...

it does take some time, but with patience and experimentation it will all work out.

LaraK, draw on the positives of that previous experience and enjoy your fresh launch. Does this mean this is your first time with a team such as the 21-Day Kickstart? How smart of you to hook up with support this time around!

You make an important point - it does take planning and fresh mindset to make dietary changes and concentrating on what you will gain from these changes and the tactics of preparedness, along with support, will get you there.

HI Agnes,
that recipe was no recipe. I started with tempah tamper patties out of 1000 vegan recipes. It was bland. So i started adding things...

Basically it turned out to be a chipolte burger. It had hot sauce, hamburger relish, and chipolte chili powder along with tempah, oatmeal, breadcrumbs, frozen corn and green pepper. It had so much stuff in it, i could never do it again. I have made enough patties now that i know what texture i am looking for and i just taste till it's good.

You are incredible -- you really inspire me. I'm going to get more creative in the kitchen. I love how you mixed the black beans with the pepper and onions to make the burgers -- I'm going to experiment next time and add other stuff. I never used tempeh - I'll have to try it.

Well, my whole family will be doing the 21-day challenge together, including our teenagers, so don't lose heart! Tonight we had red peppers stuffed with a sauteed brown rice, veggie and TVP mixture with a side of diced golden beets and greens sauteed with fresh lemon and peach jam, and finally fresh tomato and radish slices. Dessert was vegan peanut butter rice krispie treats.

We actually started about 3 weeks ago. We thought it would be really hard what with missing yogurt and cheese and cream for coffee and bacon and what not but the truth is, we only missed the IDEA of those foods. We've found so many wonderful vegan recipes that we really haven't missed anything. Even though we have a chest freezer full of steaks and chicken and roasts we are going to give them away to friends who will enjoy them because we won't be eating them anymore.

Hello everyone. My husband and myself will be doing the 21 day kick start. I am super excited, he is agreeing to do it with me. We are both big meat eaters so this is going to be a true adventure. I am hoping that the change in energy and overall well being will promt us to keep up the better eating habits.
