Thoughts on 2 recipes:
So i see roasted red pepper and carrot soup on the list. It is a favorite of mine, but i make it just a little different. I shredd the carrots & onion in my food processor. Cook those & the diced roasted red pepper in water or stock. Then instead of transferring hot liquid to a food processor i use my stick blender to get a little smooth creamy like soup base. If you don't have a stick blender, you could use a potato masher.
By shredding the carrot you don't need to transfer hot liquid back and forth from/to anything. And you don't have to wait for it to cool.

The other recipe that is a great one.. the confetti couscous... my honey didn't like the whole wheat couscous. . so i used the large israeli couscous. that reminded us of tapioca. Its very good. I don't like rasins; I never had. Apricots didn't taste right to me in the recipe. So i tried Ocean Spray Craisins (dried cranberries) Cherry flavor. Everyone seems to like that salad now! i get asked for the recipe after i sub the raisins out. I am sure the whole wheat couscous is better for you, so try it that way first. But if you don't like it, don't give up on it. BTW most people like it. These kickstart recipes are ment to appeal to most people. I just like to tweak.

I've never had couscous, imagine that! This'll be my first taste ever---the recipe on the plan sounds amazing. Can't wait! Smile

I am a huge fan of the confetti couscous. I made it in January for New Years Eve and everyone loved it. I am making a variation tonight -- confetti salad with balsamic, served with steamed red potatoes and wild rice. yum.

I just made the curried lentil soup and carrot and red pepper soup to prepare for the week. I have to agree that waiting for the carrot/onion mixture to cool and transferring it back and forth from pot to processor is inconvenient so I'm going to 'borrow' the idea and shred the carrot and use a stick blender. The curried lentil soup definitely has more the interesting flavor of the two but both are quite good!

My friend and I both doing the kickstart so we're going to share the cooking. She made couscous confetti salad and the hoppin' john salad and brought some here. I'm going to bring her soup tomorrow...teamwork works!

I have a question....do you have to use soy milk in that soup or can you use a different type of milk (coconut or almond, maybe?)

This is my first time making the soup and it has homemade soy milk in it. I am planning to make it next time with almond milk because I like the taste better. Experimenting can be fun and many people have different reasons for not wanting to use soy products.

hi.. i would just be careful to note if the milk alternative you use is sweetened or unsweetened. I always go first for the unsweetened. It limits sugars and doesn't add more flavors to the dish. Sugar can really turn a dish upside down.

If it is just that you don't have it on hand.. go ahead and use what you have.. but if you are not quite sure of the taste you might want to consider it again. Soy milk is generally lower in sodium & sugar, higher in b-12, higher in fiber, and higher in protein.

for the confetti salad, I couldn't find any red cabbage at the store, and i didn't want to drive round town looking for it. Also, stupid me, didn't think of just taking normal green cabbage Embarassed
So I just substituted it with spinach. It turned out quite yummy. Also, I didn't add in any raisins or apricots, fruits in the same mouth-full as veggies is a disgusting thought for me (weird I know). So instead, i'm just going to have my raisins later with a banana as a yummy snack Smile

To cch22: You are now my go-to girl since I can't seem to find the older recipes. My first day was Jan 2nd and two of the best recipes were the couscous confetti and the carrot and roasted red pepper. You sent me the recipe link I needed for the couscous but now I need the same for the carrot/roasted red pepper. I don't have a printer to print out the daily recipes! (I had all the items I needed on a grocery list but if I didn't need to buy an item, it got left out. That's all I had to go with to make the soup and couscous salad. Both delicious. Btw, I added some ginger to the carrot/roasted red peppers and it made it pop! Thanks.
