I love it! Last night I made stuffed eggplant with orzo and spinach. It was delicious. Although I must admit that hollowing out eggplant is not easy and I did add more spices than called for because I thought the receipes suggestions were bland. Has anyone else tried any of her receipes you could reeommend? I just thought that maybe we could compare notes.
