Next up, radishes

Okay all, for the last two weeks we've had radishes in our CSA type basket. Plus, we'll have more radishes in a couple weeks when ours are ready to harvest. Aside from using them in a salad (we've added them to regular tossed salads, to orzo salad, etc.), how do YOU use radishes?

I like to slice them thin and layer them in a hummus sandwich.

Thanks - it's hard to use up a lot of radishes on sandwiches - one radish, sliced thin, can divide into a lot of sandwiches. We used some in orzo salad and some in a root veggie hash.

That's true. Fat Free Vegan has this recipe that I wanted to try but haven't yet because not everyone eats radishes here -

I like to roast radishes. I usually use daikon, but have also roasted the standard red ones. I slice them, then put single layer in a pan and pour a water and Braggs aminos (or soy sauce etc) mix over it. Bake about 400 degrees for 15-20 minutes, then flip, and bake til done. It is easy to eat a lot of them this way - not as spicy.

What a great idea! I never thought of using radishes in this way, on a hummus sandwich.
