On the Vegan Table Today: Week 2

I thought I'd start a thread like I did Week one...encouraging one and all to add to this thread what they are actually eating, day by day!

On the Table Today...

Day 8...

B: Dry-fried hashbrowns

S: Oatmeal with blueberries; air-popped popcorn

D: Very veggie soup (lots of 'em! potatoes, mixed frozen veggies, edamame, cannellini beans, asparagus, etc)

Day 9....

B: Dry-fried hashbrowns

L: 2 soft tacos with mashed beans, cabbage, broccoli slaw and taco sauce

D: My scary green soup (this version had Yukon Gold potatoes, lacinto kale, romaine, turnip greens, radish greens, garlic [both roasted and raw], and green onions). We call it "scary" green soup because it has veggies in it my DH wouldn't eat otherwise (like kale).

B: Multi-grain toast w/ Earth Balance & Raspberry Polaner All-fruit Preserves + flax-berry-soymilk shake

L: Ciabbata Garden w/o cheese from Jason's Deli (it's good to be the person ordering the meeting lunches)

D: Leftover Spanish Rice & Black Beans w/some sort of green added in tonight.

S: pistachios

Day 8:

B: Ezekiel sprouted grain cereal with almond milk and flax seeds.

L: Miso soup, pita with hummus, greens

S: Apple

D: Easy Stir-fry with seitan and brown rice

B-fast: Nut oat bread, toasted, with cashew butter and a banana
Lunch: Subway's Veggie Delight Sandwich on whole grain bread and four bean salad
Dinner: Hummus, whole wheat pita and salad with romaine, garbanzos, tomatoes, cucumbers
Snack: An apple and some walnuts

What I ate : Week 2

B Oat Bran hot cereal, Almond milk, apple, cinnamon and pure maple syrup.

L Mexican corn salad and brown rice. Almond milk.

Snack Apple

D Broccoli soup, veggie burger with one of those 100 calorie buns. (I really like those) Some lettuce on my burger. And carrots.

Snack Banana and a few almonds.

Day 11:

B: Ezekiel sprouted grain cereal with soy milk and flax seeds.

L: leftover Easy Stir-fry with seitan and brown rice
S: Grapefruit

D: Cajun style black-eyed peas with brown rice and collard greens

Hi Jamie & Friends,

It's Junko. Its my husbands day to make the meals.

B. He juiced some organic oranges, then he mixed equal parts organe juice & water. Next he put the orange/water mix into a bowl, He then added the pulp, some sliced banana, and he topped it of with some walnuts and a sliced strawberry.

L. Cooked Spinich/Tofu Salad. He started with a base of cooked spinich, then he topped the cooked spinich with a few pieces of uncooked spinich, avacado, red perpper, some cooked burdock root,tofu,and a little bit of sesame seeds.

D. Black bean burrito's. Spinich wrap,black beans, chinese cabbage, cilantro,red onion,and mild green salsa he makes "homemade".

L: Soft taco made with Leftover Spanish Rice & Black Beans plus corn & spinach. My tortillas weren't whole wheat, but I think I'll survive.

D: Pantry/Fridge cleanout: Tempeh tacos w/ baked corn tortillas that are surprisingly shelf-stable + avocado and I'm not sure what else for topping - probably spinach. I haven't been eating nearly enough rainbow. Embarassed

D: Tomato-veggie-bean soup with Italian flavors. I did a basic veggie soup earlier in the week, and am stretching leftovers by adding different stuff each night. Tonight I added fire-roasted tomatoes with roasted garlic, and garbanzo beans.

this is the first time I have seen this one!
Very Happy

B-Green smoothie (mixed greens, celery, pear, Kiwi, banana, rice milk)

S-soy yogurt over frozen berries

L-Beans n Greens and Mac n Cheese

D-Carrot and Ginger Soup

Oh, and I think I will be having chocolate tonight!!!

S: peach chunks; air-popped popcorn

D: loaded salad (including radish and broccoli sprouts...yum!), baked beans, and scary green soup
