Dear Kickstart Forum Group:

Thank you for your patience as we transition to life after the January 21-Day Vegan Kickstart.

We will be keeping this forum open in between and during other Kickstarts. It will be titled “21-Day Kickstart Community Forum: January 2010.” The new forum will be labeled March 2010, and so on. You can stay in this forum, participate on the new forum(s), or both.

To help the forum stay alive and well, can you help keep an eye out on posts in need of attention? If you see a post that is inappropriate or requires PCRM’s perspective, would you please notify me right away at slevin@pcrm.org? I will be reading posts on the January 2010 forum, but probably with less diligence as we plan and implement the next round. But I have assured PCRM you all are very good at steering the conversations in positive directions and have offered remarkably helpful advice just as well, if not better, than I could.

Because there are a few things that we can not keep “live” every day, such as the January menu and celebrity pages, I want to encourage you to check out all of the resources that we do have year-round:

1.   NutritionMD.org– where most of our recipes originate. You can search the recipe database based on what you have in your pantry or refrigerator; just type in the appropriate item, such as “kidney beans” or “spinach.” You can compile a grocery list based on the recipes you like. Besides recipes, you can learn more about various disease states and their appropriate nutritional considerations.
2.   CancerProject.org– some of our recipes are from this site. You can read about the nutritional considerations for cancer survival and prevention. You can search here for our cooking class series that take place all over the country.
3.   NutritionCME.org – are you a health professional in need of continuing education credits or are you interested in reading scientific articles about nutrition and chronic diseases? This site has articles and videos on heart disease, bone health, cancer, and more. Ask your health care provider to check it out so she/he can get free continuing education credits while making a connection between diet and health. It’s a win-win for all involved!
4.   FoodforLifeTV.org – check out our Food for Life TV webcasts that air every Thursday, featuring cooking demos or short lectures. You can sign up for a weekly reminder to watch the new show.
5.   Recipes of the week – go here http://pcrm.org/health/recipes/recipeoftheweek.html or here http://www.cancerproject.org/recipes/index.php and click on the picture that says sign up for the recipe of the week.
6.   Subscribe to Breaking Medical News here http://pcrm.org/news/bmn09.html. We will send you summaries of the latest research articles being published in the world of nutrition.
7.   Join us again at 21DayKickstart.org for the Kickstart starting on March 1!
8.   Sign up to stay informed about (almost) everything in one fell swoop here http://support.pcrm.org/site/PageServer?pagename=pcrm_publication_sub. You’ll receive our monthly PCRM Online update.

Hi there,
Is there any way to download the January menus/recipes to have them on hand for those of us wanting to start/continue before the March 21 day kickstart begins?

I signed up for the Jan 21 day but had some major issues to deal with (family illness, relocation) that kept me from participating in the kickstart, although I have been checking into the forums and trying to view the materials to get myself prepared. By Feb, all should be calm for me again and I want to start then so that I get a head start before the March kickstart takes place. I'd love to use the menus/recipes from January.

Wow, Susan, thanks! I'll be following this site and all the other links. PCRM does phenomenal work in many areas and I'm thrilled to get more involved in making a difference. Thanks for all you've done to give me the Kickstart I needed!

Saving the meal plan, etc.

You can save the meal plan as a web page!

Depending on what browser you use it might be slightly different, but it's a similar process for any browser.

In Firefox:

1) Go to the 21-day Meal Plan page (or whatever you want to save)
2) Click on "File"
3) Choose "Save Page As"
4) Choose "Web Page, complete"

In Safari:

1) Go to the 21-day Meal Plan page (or whatever you want to save)
2) Click on "File"
3) Choose "Save As"
4) Choose "Web Archive"

I'm on a Mac so I don't have Internet Explorer, but the instructions would be basically the same. Maybe somebody who has that can post instructions. Smile

This will save the whole page as a file you can open later in your browser, that will act just like the original page (though some images may be missing).

The recipe links should still work since they are on the Nutrition MD or Cancer.org portions of the site. (You can also make your own meal plans by creating a login for Nutrition MD.)

Susan, thanks for the info -- I'm glad the forums will stay up!

Shanna, thanks for the instructions on downloading the menu and recipes. I have internet explorer, and the instructions are exactly the same. Just "Save as" and then be sure to use the pull down menue to select "web page complete."

I'm so glad to be able to keep all of this great information! Very Happy

tammay - you can print out the calender itself and by going to each link on the recipes there is a print button.

This is what I did. I look at what I am going to have and tack up the recipes for the following day. I have also been cooking ahead and deviating from the plan to fit my budget and foods I have.

Thanks for keeping the forums open. I still need help, I'm working on it. But....as someone else stated I too have a lot going on at home. So the forums are wonderful!! Laughing

Thanks to all involved in setting up the 21-Day Vegan Kickstart Program. It gave me a great start to getting back to the Vegan Lifestyle.

The past few days, I've been feeling more "energy" than I have in a long time. I was diagnosed with Lupus in April 2009 and have experienced so much extreme tiredness. So, when I feel some energy coming back.......well...it's just so exciting and encouraging.

And thanks for keeping the forums going. Support is so important.

Yes, let me add my Thank You here too! This has been a great experience for my husband and me. I was vegetarian for 12 years, but have been eating meat for the last 4. Since Jan. 1 I've eaten 100% vegan. We tried a lot of the meal plan suggested recipes, and rediscovered some salads and soups that had been old favorites.

It would be neat if there were a way to rate the recipes, or a "favorites" forum. I, for one, know that the Asian Persuasion Coleslaw and the Sweet Potato and Lentil Soup with Shiitake mushrooms (from Dr. Esselysten's celebrity page) will be in regular rotation at my house from now on. There's no time, really, but I'd be curious what favorites other people discovered during the kickstart.

Thank you again, and see you in March. Maybe then I can add a signature line like some of you have "Vegan 6 weeks."

This forum has been an incredible asset to me on this 21 day journey!

Whenever I could, I logged into the forums just to see what everyone was talking about, to learn new food ideas...and generally get inspired!

It's great that the forums will be staying up at least until the new Kickstart opens...though as of tonight...it is hard to find it! Hopefully, that will be rectified in a few days.

I've run recipe lists on the Internet since 1998, and decided a couple of weeks ago that I'd like to start a list on my own server just for the people who've been a part of this Kickstart. I really hope that people who've been a part of this forum (both as active posters or readers) will consider joining me on my server, on a list created just for us by me, Kickstart-Friends.

I hope that we'll just be able to continue what we've started here, asking and answering questions, sharing recipes and food ideas, sharing triumphs and struggles, etc.

I'll wait a few days to approve subscriptions...hoping to have more than just me on board!

I start week three tomorrow so I am glad I can still log onto this website. Feeling better every day even if I am not 100% sticking to the diet for one day I will!!!

Thank you Susan and everyone else! This has been an extremely fun and interesting experiment and one that I plan to continue now. I really surprised myself, tried new things and learned things that I didn't really know before.
