What is your food today Tues Jan 4th

Hi All, Welcome to all! This is proving to be a great kickstart.. some familar faces and some new ones. Today- cereal w/fruit.. snack at work..fruit..pear or orange.. lunch.. last of the soup i had made a couple days ago with cornbread. for dinner i am throwing something together now.. i sauted in water onion, garlic & a little leftover baby bella mushrooms... then added 2 cups kitchen basics veg stock..bringing that to a boil.. then adding 1 cup quinoa and a tiny bit of end of the jar salsa for flavor..cover & cook 15-20 min.. then adding 1 can of black beans,drained... and a bunch of broccoli crowns.. i am keeping my fingers crossed.. hope it's good. i don't ususally use so much veg stock.. usually i go one cup water & 1 cup veg stock. i kept the spices about the same as in the salsa... i like garlic w/both broccoli.. i see veganer did about the same yesterday... they had quinoa w/black beans and steamed cauiflower.. maybe i put too much in one dish.. we will see.. also note to self... yesterday i took carrot sticks for walking around shopping.. bad idea...who wants to touch all that stuff in the stores and then stick food in your mouth? not me.. i wash my hands before cooking and eating... so i am not planning on that again.. maybe back to a grab and go bar that i can leave the wrapper on while i eat.. or those blueberry bars in another post sounded good. so what is your food today??

I like to start a nutrient-dense day with a green smoothie. When bananas get over-ripe, I peel them and freeze. Today I threw kale, a clementine, a frozen banana and a little juice into the high speed blender. Ready in less than 2 minutes!

Breakfast: cereal, unsweetened almond milk, scattering of chocolate chips (vegan) Snacks: apple, banana (I usually have one mid morning and one mid afternoon) Lunch: leftover rainbow chard vegan quiche and a mixed greens and tomato salad with balsamic vinegar Dinner: black bean patty (Veganomicon recipe) on a homemade whole wheat bagel with homemade pickles (and probably ketchup too - organic made with agave instead of sugar) and homemade cole slaw on the side --Deb R

Hi Deb & Bobby.. I hope this doesn't post twice.. i did type it up..but for some reason it's not showing... oh i see it didn't post because the title was too long.. you guys might have to shorten it.. Bobby.. super glad you posted the tip... i forgot all about being able to freeze bananas and use them later.. and it sounds like a winner in the smoothie!! perfect.... now that i have my husband eating a banana a day, they don't have so much chance of them going bad; but i did need that reminder.. don'thave to resort to cookies or banana bread. Your idea is so much better! Deb.. your plan looks good.. all set for a busy day? off to work? update on the quinoa dish.. the flavors were good. Veganer did it better by steaming the cauliflower separate... I had to keep adding water just to get the broccoli crisp tender... then when done it was a bit brown w/lots of broccoli.. so i added a can of diced tomatoes w/green chilis... success!! it is good.. good thing too cuase there is a lot of it. while quinoa was cooking i whipped up carrot, pineapple & fresh ground nutmeg muffins.. i can use them as a dessert. already a favorite recipe. i have made it several times.

I have to pack whatever I'm going to eat first thing in the morning and bring it with me to work. We always try to make extras of favorite meals (chili, soup, etc) and package in individual serving containers so that I can grab and go. Fortunately, we've got fridge, stove/oven, and microwave available here (plus all the utensils, plates, etc and they stock the fridges with organic ketchup, mayo, mustard, PB, all-fruit jam, margarine, and butter for employee use). And, I work close enough to pop home for a quick lunch if I choose - and Wednesdays I work from home so I have a bit wider range of options for lunches. --Deb R

hi all, i work from home so i have the advantage to cook my own food..this has proved to be very helpful during my transition to vegan from vegetarian.. morning- homemade banana almond milk with wheatabix, raisins and flaxseed lunch - mushroom, red pepper onion bulghur (its some kind of wheat rice) dinner - left over spinach borek and salad (its an agean pastry dish) snack - nuts, dried fruit(walnuts, raisin, dried apricot) happy new year !

Breakfast- GF rolled oats with walnuts and blueberries Lunch- Polenta with black bean soup and a salad Snack- 2 clementines Dinner- I haven't decided yet. CCH, your quinoa dish sounds really good. I may have to try it. B today was hash browns (oil free, McDougall style) with shredded spinach. S I am nibbling on the last of the confetti couscouse salad that I made for NYE. It holds up well even after 4 days. L will be leftover sweet potato/black bean burritos rolled in a whole wheat tortilla. I am trying something new for supper. In my fuzzy logic rice cooker, and have brown rice and water. Over that I placed my silicon steamer basket with an assortment of veggies (edamame, peppers, onions, corn, etc.) I set the timer for 6pm. My hope is that I'll have beautifully steamed rice and veggies, which I'll jazz up with some terriyaki or tamari.

update on the quinoa.. it actually turned out really good!! adding those diced tomatoes with green chilis made it quite tasty.. i would reccomend it!

I'm a snacker so I'll go by timeframe. a.m.- coffee with Silk FV creamer 1 ezekiel sesame toast with PB and 1/3 banana. 1 cup carrot red pepper soup noon - 3 cups of confetti couscous (I waited to long to eat then ate too much). 4 p.m. -2tbs of hummus w/5 brown rice chips 5 p.m. Hummus, spinach, tomato, onion on Whole Grain Sandwich thin. 6 p.m.- 3/4 cup of greens and beans 7 p.m. - 1 cup of vegan and apple coleslaw Oh my, did I eat too much?

Today is another good day for me B: smoothie with 1 env. Brandon's green powder S: one pc. whole kernal rye bread topped w. garbanzo bean spread, onion, tomato L: Salad with 1/2 whole grain roll D: will be leftover spag. squash and a terrific sauce of tomatoes, pureed with roasted garlic, eggplant and red peppers Luvscoffee: I don't think you ate too much, but you must be full by now!

Hi! I had a great day of eating and everything else today...here goes: Breakfast: Oatmeal with grated apple, cinnamon, raisins & sweetened almond milk Green tea with sweetened almond milk (weird, I know but I love it!) Lunch: Homemade tomato basil soup, polenta with rosemary and roasted garlic, 2 cuties and water to drink Dinner: Lunch leftovers with NanoGreens to drink...yum! Snack: I'm about to head over to the kitchen for some apple butter eaten straight from the jar The tomato soup is the best ever. Let me know if you are interested in the recipe. My daughter just had jaw surgery and is on a liquid diet, so lots and lots of soup and smoothies at our house!

breakfast: frozen blueberries added to oatmeal, with cocoa powder mixed in snacks: applesauce cups, raisins, 2 prunes lunch: two 13 oz. whole wheat tortillas heated on flame, then spread fat free refried beans on tortillas, heat in microwave, then roll up each one dinner: put basmati rice in bottom of rice cooker and put frozen broccoli in top part of rice cooker(steamer), when done mix dessert: coconut milk ice cream cch22: glad you liked the diced tomatoes, I will have to try your recipe. HI pippin and veganer.. if you do make the quinoa dish please consider steaming the broccoli separately.. easier to control the outcome. I had to add boiling water a couple of times to keep things from going dry before the broccoli was done. BUT it really did come out good. I would say an 8 out of 10. Ten tho is hard to get. that is the food you put in your mouth and sit back in your chair.. stop you.. says please don't swallow.. it's just too good to be true. @pcrisis.. i like the recipe you were wanting to try.. but i just checked out miso.. $9.99 for a SMALL bag.. wow.. i am going to have to try that at a resturant to see if i even like it before i buy it. i almost fell over when saw the price on the shelf of $9.99 yikes.. luvsCoffe... nope i don't think you ate too much.. some of the portions were actually small.. just eat when you are hungry.. btw.. what coffee do you like? hubby likes Shock, Green Mountain, and a couple at the local coffee shop. Cat bean.. polenta? i bought that stuff in rolls.. we were not impressed.. bland.. i love corn.. i think i have to try and make it from scratch.. any great recipes? veganer.. seems you like oatmeal with blueberries & cocoa powder.. you have posted that before...have you tried the hersheys special dark cocoa? we love it.. i may have to try your oatmeal now that i found organic blueberries in the frozen health section of the supermarket. I was bummed at first to find that blueberries were some of the highest fruit for pesticide use.. happy to see them in the organic section.. i will be a frozen blueberry purchaser soon!

We band of vegans. Breakfast: leftover wild rice pilaf (Lundbergs) with nutritional yeast, cinnamon and almond milk formed into 2 pancakes and sauteed in nonstick pan 'til crispy. Serve with SF apple/pear butter. Dinner: Variation of Dr. McD's red lentil chili with smoked paprika and Yukon Gold potatoes with crumbled tempeh. Kale and crisp garlic slices. Snack: 3/4 cup (well, maybe a tad more) Kashi Lean Crunch Happy vegan eating to all and good night.

The miso in my health food store isn't that steep I understand why you wouldn't want to pay that price! I buy an organic miso made from brown rice and it's around $5 for a 13 oz container. Still not cheap but I use it in a lot of recipes because I have a liking for miso soup and other Japanese recipes, so it's worth it for me. I made the recipe I linked to with some modifications, I'll be posting about it on my blog here in a few minutes. It was really good! Light yet filling which is what I need because I'm in my third trimester of pregnancy and the baby pushes on my stomach so I can't eat a lot of dense food at once.

thanks pc.. i will look at other places for miso.. that was at the local supermarket.. i will try the health food.. maybe they have the kind you are talking about. the other thing i didn't like about the one i found was that it was in a bag w/a zip top.. like a baggie top.. so i thought if i use a couple of tbsps.. then i can't close it like a tub unless i put it in something else. one thought.. i just got a box from thespicecompany. com today!!! yippee.. they have great FREASH spices.. wow.. no added fillers.. some for the miso soup.. do you buy store spices? have you ever tried the premium spices? they make a big difference. BTW i am not promoting just the spicecompany.. i am just excited about my new spices.. I got dehydrated ginger..not so easy to find.. also a bunch of other ones.. i am happy with all..

Wow! I'm glad I read this thread; there are some great meal ideas on here! It's also made me realize that I do not eat very healthy, at least not like all of you! I'm always trying to reduce the processed/pre-packaged foods, but it's tough sometimes. Anyway, Breakfast - whole wheat pita with hummus, pineapple Lunch - Amy's brand tofu scramble pocket, apple Snack - vegan rice krispie treat Dinner - a DELICIOUS recipe from the Supermarket Vegan cookbook - sweet and sour roasted pineapple and veggies. I skipped the rice so that I could have an evening snack which was a couple Boca chkn nuggets (in lieu of ice cream which I'm already craving!!!)

Breakfast: Green smoothie (an orange, 1 cu blueberries, 2 large handfuls of spinach), 2 pieces of Ezekiel Cinnamon Raisin toast Lunch: Pintos, kale, onions, red peppers over rice, fresh pineapple, grapes and part of a banana Snack: hummus with baby carrots and a few triscuits Dinner: whole wheat penne pasta with portabella marinara sauce Able to resist left over Christmas cookies and scones at work. Tomorrow will be a tough day...we're having a staff meeting with pizza from an excellent local place. I'm taking more of the pasta and sauce. Pam
