I'm not luvscoffee or hiphopveg but our favorite hummus recipe is in Dr. Barnard's Stopping Diabetes book - we do the roasted red pepper variation given.

Hi HipHop... nice to meet ya! what are vegan rice krispe treats made with? i haven't looked at marshmellows..but i thought they were out? not sure... yes i have been inspired to try new things thanks to this thread..

Pam.. Great job on fending off the Christmas treats. sorry..but at my work. i am one of the people who took them in...if they don't get eaten.. i will just chuck them. I don't know if it will help with your meeting but for me to avoid pizza i have a few tricks.. 1) eat a pizza of my own without cheese. You know you might ask whoever is ordering to order a no cheese.. in Utica NY they call them Tomato Pie. They are a hit. 2) if neither is an option, make sure not to go hungry. 3) really gross yourself out thinking the cheese is all glob and fat and grease. 4)picture some of the videos about how dairy cows are treated... mom's bleating for their babies.. calves being slaughtered for veal..
if all that fails just make the best choice you can at the time and move on.

Vegan marshmallows are available at many health food type places, Trader Joe's, Whole Foods, etc and I know some folks who have made their own. I think they use agar or something similar to replace the gelatin.

hi deb!! great to hear that we can find vegan marshmellows.. my son LoVES rice krispe treats.. now i can make him a vegan version.. THANKS!!

Hi Ebru, I usually make my own (just canned drained garbanzos, lemon juice, garlic, garam masala, maybe roasted red pepper, maybe some water depending on the texture), but I was busy this weekend so picked up a local brand at the store. I live in Idaho in an area called the Palouse which is a garbanzo/lentil growing area. The local brand (Bronzestone) uses local products. It does have oil and tahini in it so is higher in fat than what I make, but I figured it was better to have it than risk going hungry!

Thanks for the tips! I am planning pasta from home so that should satisfy me. I do use the Amy's vegan pizza at home when everyone else is having Papa Murphy's!

For the 4th we had:

B: Whole wheat cereal w/ soy milk and a banana + coffee w/ soy milk
L: Boca Chik patties on whole wheat buns w/ catsup + diet clear soda (I plan on phasing this out, but not all at once, I am prone to letting myself get dehydrated because I can't seem to make myself drink water and will drink nothing if I stop the soda, at least it's not sweet caffeinated tea anymore...)
D: Black bean burgers from the Veganomicon, on whole wheat with poppyseed dressing. These were wonderful, I left the onions and garlic out due to one person having an allergy and used not chik bullion and creole seasoning to make up for it. They were super tasty. Even my 11 month old liked them, although 2 year old wouldn't try them.

For a "snack" we made some soy chai lattes from scratch. They were really good, although it was hard to get all the spice powder out with the strainer (coffee filter) I used. Ended up waiting for it to settle and then pouring it off. I'm sure there is a better way.

I want to try some of the recipes on the actual kickstart. I feel like I'm following it in spirit if nothing else. But a lot of work went into making the program and I feel like I am being ungrateful.
