DAY 8: Whatcha eating?

Breakfast: confetti salad with bulgur, edamame salad (posted on recipes second batch made in 4 days, sooo good!) and green beans with garlic.

lunch: baked falafel (appetite for reduction) on lettuce leaves with tomato and sweet and spicy butternut soup (happy herbivore)

dinner: Leftover seitan stiry fry!!

snacks will be fruit.

B: cereal and plant milk as usual (I know it's boring but I don't like to think before 8 am at the earliest!)

L: whole wheat pasta mac & "Not cheese" with broccoli

D: not sure yet [edit: just spoke with hubby and he's making CHILI for dinner! We love his veg chili - and we've got omni friends and family that request it! He makes it mild (for me - reflux isn't pretty if I try to eat spicy foods) then adds a bit of his fav hot sauce at the table to spice it up for his own taste buds]

Snacks: sm apple, banana, grapes

B - raspberries and oatmeal....

Am/lunch (11:00) - left over corn grits and zucchini lasagna...mmmmm

Pm (2:00) - kale and quinoa

D - ????? Maybe left over lasagna or stir-fry with tofu

B- Tall glass of greens smoothie (Dandelion greens + cranberries)

L- 1 Plate of brocoli with Nutritional yeast
Leftovers of the Quinoa soup
Sauted cabbage in water with spices

D- Green smoothie
Brown rice and Lentils

B: Hash browns and spinach, no oil. Green jasmine tea.

s: eating pretzels as I type this

l: leftover lentil/tomato stew over brown rice

s: fruit. Not sure what yet. grapefruit or banana.

d: Probably leftover corn/potato chowder and steamed broccoli.

B - oatmeal with berries and unsweetened almond milk
(Better Oats packet with whole grain rolled oats, barley, wheat, flaxseed, quinoa, rye and sea salt - 160 calorie packet)

L - open faced sandwich with hummus, tomato, lettuce, red onion, Amys lentil soup and black grapes

D - homemade black bean burgers (open faced) and salad with balsamic (no oil)

snack - skinny pop popcorn w/ nut. yeast

I'm thinking one meal at a time today - so far

Breakfast - 1/2 c quinoa, 1/2 c. kidney beans, mixed with 3 Tbl salsa

Snack - 1/2 banana and a few dried cherries I'll probably look over others meals to get ideas for the rest of the day.

Vegankitty - can I ask how you make the quinoa soup or is there a recipe online I can look up? Also, I was wondering what type of spices you sautee your cabbage in. Sounds good!

I think some one had posted a recipe here! I just glanced over the recipe and added a few things on my own.

1. Some left over quinoa that I had made for salad
2. 2 small cans of vegetable broth
3. A few stalks of leaves
4. Mixed vegetables (carrots, corn, green beans)
5. A medium sized red pepper
6. Few cloves of garlic

I sauted leek and the veggies in some water. Then added the broth and quinoa. Added some dried parsley, dried garlic powder (yeah more garlic Very Happy). Also added a dash of coriander and cumin powder (you can exclude it if you think it will be spicy) and a some cayenne pepper. Garnished it with cilantro leaves for a pretty sight! It makes a hearty soup. Yum! I am feeling hungry already Smile

Um... question: #3 a few stalks of leaves - should that say "leeks" to match the sauteed veggies part or is that any green leafy's leaves?

We're always looking for tasty ways to use leftover quinoa - whoda thunk that'd be a staple in our pantry?

Oh yeah and for the cabbage- well I again used coriander/cumin powder. I first dry roasted cumin seeds and mustard seeds, turmeric and asafoetida. Then added some chopped garlic and water. Let it simmer for about 5-10 mins. Then add the cut cabbage and add some more water (eyeball it- enough to atleast get my cabbage moving). I also added the coriander/cumin powder (as mentioned above) and some red chilly powder (Feel free to exclude it if it is spicy). Basically, the cabbage should shrink and the water should be almost nil in the pan. About 10 mins before turning off the stove, I added some frozen green peas (for color). In the end garnished it with chopped cilantro leaves! Cabbage is one of my favorite vegetables!! Smile

B: scrambled tofu on whole meal toast + wholemeal pancakes with maple syrup.

L: sweet potato falafel wrap

Theodore~ I would also love the sweet potato falafel recipe...
Breakfast~Whole grain cereal with soy milk
1 pc. toast with earths balance and honey (not vegan but yummy!)
Snack~handful trailmix(small handful)
Lunch~Leftover veggie unfried rice and veggie potstickers
Snack#2~ 2 prunes 1/2 apple
Supper~ Pinto Bean Sloppy Joes and Asian coleslaw
I am stuffed today!!

Then I added greens, and wrapped it all in a large Khobez bread.

It was so good.

Want to share a delicious breakfast I am eating while typing this. As a diabetic, there are many things I should not eat because of carbs being too high and having to take too much insulin. Hope you Enjoy!!! I took 3 units of Novolog instead of the usual 12. Yea!!!


HAPPY BREAKFAST
1/2 cup brown basmati rice, cooked(yields 1 cup +); MEASURE OUT 1 CUP;
1/2 cup Silk Pure Almond soy milk;
1 T. blue gave;
3 sliced strawberries;
1/2 small banana, sliced;

Yields:
316 Calories, 70 Carbs, 2 Fat, and 5 Protein
