Easter....

So how is everyone doing with the upcoming Easter?

I know there were some questions about decorating eggs... I seem to remember the fun part being decorating and then the hunt.. never did eat the things.. mom would have to make egg salad.

So i am thinking.. maybe decorate those little plastic ones with glitter & beads using glue.. that would be fun.. then keep it a surprise for the kids.. put a little toy or sticker inside to hide them... or a tag.. one trip to the water park.. one chore mom will do (free pass) ... redeam as needed.. one extra hug.. one story..

what's for dinner? For me i am considering Roasted Vegetable Strudel using puff pastry from 1000 vegan recipes page 333. It will be the first time i make it, but everyone coming is very forgiving if it doesn't turn out as expected. Also i am thinking i can roast the veggies the day before, so Easter prep goes quick & i can enjoy my company.

I am not cooking this Easter as I will be having dinner with family at a family members house. They are meat eaters but cook my share of vegetables seperate from any meat products. They are still getting thier heads around the no diary and can understand me not having milk or cheese in its 'pure' form when in front of you but forget to read labels to find out what is in different products. Actually I suspect they think checking labels is a bit over the top and just me being 'fussy'. I know they make a gravy that has milk as an ingredient so I will take a vegan gravy mix to use. It means I will just be eating roast vegetables and some greens while the others have the same with meat but it is a compromise I am willing to make. Dessert doesnt matter as I dont need it while trying to remain low fat.I dont normally have a dessert.

I'm going to a restaurant for brunch. I've checked out the menu in advance. Not a lot of vegan options, but some. Definitely not enough to be worth the price tag, but I'll live with it.

My daughter and her family have invited me to their home for easter. I was asked to bring a salad and I am taking the confetti couscous salad since everyone loves that one. I am also taking deviled eggs which I will not eat. Her family is considering a vegetarian or vegan diet, so maybe they will be inspired by ME!

We are going to the inlaws. They are making steaks.... I am just hoping that there are veggie dishes there that have no meat or dairy in them. I can't afford to make a dish to bring for everyone to make sure I have something to eat, and if I bring something for just me it would turn into a HUGE affair, because my mother in law will think that I don't like her cooking.When I told them I wasnt eating meat or dairy or eggs I had to go through a lecture from my father in law that there is a study done by a University (he didnt know which one) that prooved that eating eggs daily did not raise your cholesterol...sigh...says the man with HIGH CHOLESTEROL! Gotta love the inlaws! So I will eat a little something before I go and if need be I can eat when I get home Smile

i found out more easter plans..we are going to my sister-in-laws for lunch..finger foods, soup & sandwhich...I am going to take a black bean & corn dip w/chips..

then the dinner isstill strudel ..probably will make the veggies today.

I'm going to a family member's where the menu is based on baked ham and macaroni&cheese! I am taking baked beans (done with 3 kinds of beans, vegan of course), cole slaw, and a vegan pumpkin pie. Those 3 things along with the raw veggy crudites and fruit platters, and another cooked vegetable will be a nice dinner. Of course there is always hope that some of the other people bringing things will bring something I can eat, but for the most part, these same people usually bring hot dogs, cubed cheese,chicken nuggets, and twinkies for their kids that do not eat the real food.(I'm serious, and they think its funny)! Crying or Very sad

Last Thanksgiving, we volunteered to bring the mac&cheese - and used the vegan not-cheese sauce (cashew butter, nutr yeast, etc) on whole wheat pasta shells. We loved it - and had lots left to bring home since everyone else was eating the mashed white potatoes loaded in butter!

As a very wise man once said to me (OK he said it many, many times Very Happy)

"It's only one meal in three ( or one day in the week)."

So we should all plan the best we can, but the most important thing is to resume with the proper foods right away -- don't do like I did once eat a hot dog and it was 6 months of eating all the wrong things!!!

Since our Lenten custom (Greek Orthodox) is to be vegan for Lent, I figure I've had 40 days of eating however I want. Now it's everyone else's turn! I will contribute something to the meal I can eat, but keep it simple, and just enjoy everyone's company and the wonderful people. I figure that the holiday is about God, not about food, anyway : )

I finished my 3-week adventure. I decided that for Easter, I was going to eat meat, dairy, pound cake, etc. Before the end of the afternoon, I had swollen feet and ankles. By evening, my migraines returned. THIS WAS AFTER JUST ONE DAY!!!

Tomorrow, I resume my vegan eating plan. I NEED IT!

Wow - what an experiment in the power of this way of eating!

Everything at my in-laws had meat, cheese, or a ton of trans-fat margarine (like one whole stick in a bowl of mashed potatoes. Baby carrots swimming in margarine, etc. I had lettuce and baby carrots that I brought. We had been traveling for two days, so there wasn't really anything I could have brought.

Cynthia, how did your puff pastry dish turn out?

I join cathyb in saying - WOW. Thanks for sharing this. I mentioned in an earlier post that one way to find out if this way of eating works is to go back and have a day of eating how you used to eat and see how you feel. I did (unhealthy vegetarian so no meat) and ended up with indigestion and reflux. Not as extreme as what happened to you but enough to know I am also sticking with this.

@kiwi.. last year i had a sister-in-law at my house who desparately wanted to use milk for gravy. I handed her the veggie stock. She actually found that she liked the taste very much and would be willing to alternate it for her family at other times. I am not a gravy fan.. just loaded with empty calories; personally if i get empty calories it has to be worth it.

@veggies4me.. We are a little the opposite. I almost NEVER ate a "regular" hot dog. Yeah if there was nothing else.. or i was really hungry and it was right there. It is certainly something i never planned on. EVER. I mean yuck.. what is in there? So anyway the point here is now that VEGAN hot dogs are actually good. I will eat them and even enjoy them. They taste good. To me I couldn't tell the difference when i loaded it up with relish & mustard & organic ketchup. I would plan on them if i didn't have any leftovers around. You can eat great tasting and good for you hot dogs if you want. I can't remember which brand.. but one of them is good.. the other not so much.. so try a couple if you haven't already.

@cathyB.. puff pastry.. well i followed the recipe in the 1000 vegan recipe book. I roasted the veggies the night before. the day of i mixed with white beans i made from dry & a nice spice blend. The mixture was delicious. It was easy just to roll it up and stick it in the oven. All my guests, myself and my husband liked it. In fact it was "very good" To me..i think i can do better. In fact i know i can. First roasted veggies have way too much oil. So i will find a way to make the veggies crisp tender. Then maybe make it like a flat puff with the veggies on top exposed. I think i can control the degree of cooking each ingredient better like that.
So it was very good but not exceptionally delicious, a winner.. YET..
Also i will definately try making my own puff pastry.. peppperidge farm has palm oil and HFCS. In my opinion, pepperidge farm is ok to use maybe if I need something special quick, but not to put in the rotation of everyday/every month meals.

We're hosting a Pampered Chef party this coming weekend and the first thing we told the consultant was:
1 - no prepared foods (e.g. "poppin' fresh" dough)
2 - vegan recipe(s)

Most of the time, their recipes use "convenience foods" like pre-made doughs to make things fast. Hubby's spin on it is "P.C. products make it just as easy to cook from scratch - which means better, less expensive meals"

She has so far suggested three of four options and I told her to send the recipe for a Mediterranean Hummus Pizza (two of the recipes had tofu and one had cheese). We can make the whole wheat pizza crust ourselves fresh and some of the yummy roasted red pepper hummus (and we'll have to see what the rest of the ingredients called for are - I'm thinking more bell pepper, mushrooms, olives, maybe sun dried tomato as well, spinach possibly). Hopefully, we'll get a new recipe out of the deal as well.

BTW we've been planning DS' 13th birthday party - the menu so far includes mini vegan quiches, homemade soft pretzel bites with homemade honey mustard dipping sauce, fruit salad, cut up veggies (carrots, celery, etc), roasted red pepper hummus, whole grain crackers and/or pita bits; still deciding on whether to have vegan chocolate layer cake or vegan chocolate pudding pie (and maybe some pumpkin pie as well)

@ deb r.. if you haven't tried it yet.. at some point.. maybe not the first time for party..but try kale on pizza.. it's really good...crunchy..

you are really coming up with great ideas for a kids birthday party!!! i think they will really enjoy it.. kids love dipping.. and who doesn't like pretzels?

Not me - DS has full control over his party. He chooses who to invite, what to serve, etc. Last year we didn't even do a party - instead we took a family vacation to a spot I knew he would love based on his criteria (sushi, minigolf, waterfalls = Conway, NH) This year, it's going to be just family invited to share this special "transition" year as he turns 13.
