Thanks, Deb... I probably could stand to increase my water, will make a conscious effort.. and maybe more green tea. Other than one delicious experiment with vegan chocolate cupcakes (mmmm, good!) I'm pretty much eating beans, brown rice, all kinds of veggies, fruits, etc and trying to keep the olive oil to a minimum. So it's not processed foods. I realized I was snacking without thinking about it, though, on salty things, too many nuts, whole grain crackers, etc so I've been working on catching myself and diverting mainly to fruit. That seems to be working. Awareness, not just grabbing food. I fully intend to hang in and continue on this path... Are you getting plenty of water to go with the increased fiber? It's not unusual to go up a little bit at the start as your body is adjusting. Odds are you'll notice your colon start clearing itself out somewhere around the middle of the second week (give or take depending on all sorts of other factors) and then you'll see those first couple drop back off. Then it's a matter of balance - balancing grains, veggies, fruit, beans and legumes, keeping an eye on fat calories, etc. It is totally possible to be an unhealthy vegan if you're eating a lot of processed vegan foods (higher sodium content in many can cause water gain) - rice dream ice cream for example might be vegan but it's not a great way to lose weight. Ditto for the yummy desserts in many vegan cookbooks (we've got at the moment both vegan chocolate chocolate chip cookies and pumpkin streusel cake made over the holiday weekend). They're yummy, they're vegan, but they're not necessarily low fat/low calorie choices.
