Substitute for Sugar and Baking in General

What's a good substitute for sugar when baking? I've tried Splenda and my stuff comes out heavy and doesn't seem to rise very much. I then tried the Splenda mix and it's better. I don't know if it's the Splenda, my oven, or what? I didn't have a problem before.
