Many foods have enough sodium that if you eat a good variety, you'll get the sodium you need without really adding salt to it. If you exercise heavily or live in a really hot climate, you'd need to be sure to get enough to offset the sweating (obviously). As a culture, though, we're really used to pouring in the salt - most prepared foods are highly salted so we get used to that hit of salt. Rather than just salt things, try to start with no salt and add little by little to get to a flavor you like while you are preparing the food. It usually takes maybe a 1/2 tsp of salt per LARGE pot of chili or soup or whatever, depending on what you're starting from. If there's already salt in something (like canned beans or vegetable stock), you may not need to add any more salt. But, an unsalted can of tomatoes might need a pinch. Work on using other seasonings besides salt (garlic, oregano, chili - get a no-salt chili powder - lemon, and so on). --DebR
