Liquid Smoke

What is Liquid Smoke? I've never used it but have noticed it being called for in some recipes. Such as the black eyed peas, greens and sweet potato recipe today. I maybe totaly wrong, but this sounds like an artificial additive I'd normally prefer to avoid.

I'm not sure how it's bottled/created. I think they do make it from actual smoke! Just the same, it is totally just a popular flavoring, not a requirement.

You can find it at Whole Foods or possibly even mainstream markets -- if you want to see the bottle for yourself.

At the most basic, they run wood smoke (like from hickory logs or whatever) through a condenser and gather up the liquid that results, add a bit of water to get the right flavor and consistency and bottle it. But, as with anything, check the label - there may be other things added as far as artificial flavors, colors, preservatives, etc.
