Tried New Recipes?

Has anyone tried any new recipes that were so good, you're sure you'll be making them again?

I made the Tri-Color Quinoa and Greens Taco Filling from the FatFree Vegan blog. It was a hit and I'm sure we'll be making it again soon.

Vegetarian Times magazine had an awesome ratatouille recipe that we tried and loved. So we made it for a potluck and it got raves from veg*n and non-veg folks alike. This one is staying in the rotation - especially as we head into the summer where we'll have lots of fresh zucchini, eggplant, and tomatoes available.

Was it the latest issue of Vegetarian Times? That sounds like it would be a hit here too. Last night I made Chana Masala which turned out great. I was looking for a recipe that I had all the ingredients for and craving Indian food. It was from the McDougall website.

Two recipes have become favorites even for my nonvegan daughter - Polenta with Black Beans and Mango Salsa from the "Starch Solution" book and Cajun Cornbread Casserole from the Forks Over Knives Website. I think they'd both be good for company. The polenta recipe is colorful and makes a nice presentation. The cornbread casserole would carry well to a potluck.

yes, I believe it was - it had a red cover background. It uses chickpeas, eggplant, zucchini, tomato, onion, garlic and a pinch of salt - I think that's all the ingredients (but I could be missing something). I think the recipe calls for roasting everything but we just skipped that and threw it all in the slow cooker for a few hours until it was all tender and yummy. Because eggplant and zucchini are 'watery' vegetables, it doesn't need any added liquid even in the slow cooker. They give off their liquid and it mixes with the tomato juices and the onion and garlic to create a savory broth or stock right in the pot as it cooks.

Made the Ratatouille yesterday and it was a hit! I used cannellini beans instead of the chick peas because we had chickpeas in the chana masalla and have been eating leftovers. It was good with cannellini beans. I did roast the recipe in the oven. Thanks for bringing the recipe to my attention. I think it's time to give my Veg Times issues another look.

Today I made Fat-Free Deviled Eggs from the FatFree Herbivore (originally from Ann Esselstyn.) I never was a deviled egg fan but my son was. These are good! Really, they are boiled small red potatoes with hummus seasoned similarly to deviled eggs. Would be good for a potluck.

I don't use so many fresh herbs as they are expensive but fill the rice paper with brown rice noodles and a lot of veg. I dip it in sweet chilly sauce.

I really enjoy many recipes from this website http://www.healthyveganrecipes.net/video/carrot-cake-oatmeal , what I like that Heather cooks from fresh ingredients, use as little dishes as possible and its all quick and simple. She also has video to most recipes so you can see how it is done (she is a bit clumsy but darling). Hope you guys find some inspiration there like I did Very Happy

Had a yummy dish last week - cut a nice eggplant into rounds about 1/8-1/4 inch thick and lay them on a baking sheet or large casserole dish. Top each with a teaspoonful or so of crushed tomato and chopped fresh basil (and other herbs as desired, maybe a pinch of salt as well). If desired, add a sprinkle of non-dairy cheese. Bake until eggplant is tender. YUM!
