What are you eating today - Thursday?

Any new exciting recipes being tried? I'm getting in the cooking mood!

b: oatmeal with bannana - coffee w/soy milk
l: leftover vege. paella (this was pretty good!)
d: ???? black bean burgers ---- they were great -- thanks for the recipe!

Nothing really new or exciting today (Unless hubby has something surprising in the works for dinner)

b: cereal and plant milk as usual
l: leftover black bean patty with ketchup (agave sweetened) and homemade pickles, side salad
s: banana, clementine and yes, I had a cup of cocoa (contains powdered milk) and an apple cider donut (They are SO good! but they do contain dairy whey). I've also got another clementine and an apple to snack on if I want more snacks before I head home from work
d: no idea what dinner will be tonight - hubby planned to make bagels today, so we might be having black bean patties or we might do a cold sandwich night with chickpea salad on bagels with greens and such on top. Chickpea salad is not the same as hummus (though the idea grew out of making hummus so often) - coarsely crushed up cooked chickpeas with finely diced onion and celery and either "beanaise" (white bean based mayo like substance) or just a bit of vinegar and olive oil to bind it.

Yum! Just checked in with hubby and dinner will be nachos!! Organic corn tortilla chips, black beans, salsa, avocado, and not-cheese sauce all over it

Here you go.. i have made this a few times and we both like it. There seems to be a lot of ingredients, but it really is easy.. just get all the stuff out of the cupboard ahead of time. The blackstrap makes it. I don't think i had corriander.. or celery seed. I just put in celery with the green pepper!

Vegan Sloppy Joes
1/4 cup Water       
1/2 cup minced Onion
2 (8 ounce) packages Tempeh
1/2 cup minced Green Bell Pepper      
2 cloves Garlic, minced

1/4 cup Tomato Sauce or Salsa         1 TBSP Honey or Agave   
1 TBSP Blackstrap Molasses          
1/4 tsp Cayenne Pepper
1/4 tsp Celery Seed            
1/4 tsp Ground Cumin

1/2 tsp Ground Coriander            
1/2 tsp dried Thyme
1/2 tsp Oregano               
1/2 tsp Paprika
1 pinch Ground Black Pepper
Whole Wheat Hamburger Buns or Bread

In a deep, 10-inch skillet over medium-low heat cook the onion in a small amount of water until translucent.
Crumble the Tempeh into the skillet; cook and stir until golden brown.
Add the green pepper and garlic; cook another 2 to 3 minutes.
Stir in the tomato sauce, honey, molasses, cayenne pepper, celery seed, cumin, salt, coriander, thyme, oregano, paprika, and black pepper; stir.
Simmer another 10 to 15 minutes.
Spoon hot onto hamburger buns to serve

For those who might not want or have access to tempeh, coarsely chopped black beans work great for vegan sloppy joes.

Good idea Deb! Reminded me a little of the Snobby Joe Recipe. But with that i miss the blackstrap. So it might be better to sub a different bean into one i like. Also while i see oil in the recipe.. i don't use it.. i just naturally sub in water instead.

Snobby Joes-Veganomicon

1 cup uncooked Lentils      
4 cups Water
Water for frying as needed
1 medium Yellow Onion, diced small
1 Green Pepper, diced small   
2 Cloves Garlic, minced
3 TB Chili Powder         
2 tsp Oregano
1 8oz can Tomato Sauce      
¼ cup Tomato paste
2-3 TB Maple Syrup         
1 TB Yellow Mustard
4-6 Rolls

Pour the lentils and water into pan. Cover & bring to boil. Simmer 20 minutes, until lentils are soft. Drain & set aside.

About 10 min before lentils are done, sauté onion & pepper in water for about 7 min over med-high heat, till softened. Add the garlic & sauté for another minute.

Stir in cooked lentils, chili powder, oregano. Add the tomato sauce and tomato paste. Cook for about 10 minutes.
Add the maple syrup to taste and the mustard; heat through.

Turn off the heat and let the pot sit for about 10 min so that the flavors can meld. Serve open faced with a scoop of Snobby Joe on each slice of bun.

ok its not thursday anymore but here is what i have eaten:

breakfast:
coffee
smoothie!! (frozen strawberries, blueberries, cherries, a banana, silken tofu, OJ, & chia)

lunch:
a recipe from this website called "any veggie coconut curry" with brown rice. its SOOOOOOOO GOOD i make it like once a week

later snack:
i have cucumber slices and homemade garlic hummus for later and i also have another smoothie for around 4:30

not sure what is for dinner yet. Question

I'm going to look for that coccanut curry - I always love a recommendation.

I'm making more black bean patties today (Thanks Cynthia!!!!) my supply is gone already, I keep passing them out to everyone telling them to try them!

B: honey nut cheerios w/soy milk
L: refried beans and no cheese sauce on tortilla
D: leftover veggie spaghetti
S: hot air popcorn

anyways that is the recipe.
i tend to change up the veggies i put in it.
i try to always put the kale in it so i can get my leafy greens!
i dump a lot of soy sauce on it. mmmm tasty! Laughing

that curry recipe looks sooo good. I will have to try it. I just happen to have a couple of bags of frozen peas in the freezer that i was wondering what to do with!
