Another Substitutions

I know I started the last thread about substitutions and flour but I am also stuck on sugar substitutes.

In the book the Kind Diet, she calls for maple sugar or a granulated substitute? Other than plain white sugar, I know no other granulated substitute. Any suggestions? Also, although it isn't granulated, can't maple syrup or brown rice syrup be substituted? It is still a sugar? When a receipe calls for agave can't you replace it with maple sugar.

I don't know, but I'm wondering if there is a granulated form of maple syrup. It sounds like that's what she is saying.

Agave Nectar seems to be the big sweetner buzz, so I bought some recently. They claim it's low on the glycemic index as well.

Last week while talking with a gal at the Health Food Store she said something about Agave Nectar being a "hype". She said "They are saying that the Agave plant is not naturally sweet and most of the manufacturers use "corn syrup" to sweeten it up". Anyway, a guy standing by overheard her and chimed in saying the same thing????

After hearing this I decided to do a little of my own research. Here are a few links to check out for yourself. Let me know what you think...........

Like with any sweetner, excess is not good. It did mention about being hard on the liver. I have a fatty liver problem my doctor is watching closely, so I'm thinking I should just stay away from it?

Wild4stars----Thanks for the Kinddiet website suggestion. I have already been there and there are so many forums, topics, etc. it would take me a life time to find anything about maple sugar.

Craftycat-----You should take a look at this forum Page 10, dated 1/10/10 called Sweetners. A lot of information about the agave.

Unfortunately, I am looking for cyrstalized sweetners that would replace maple sugar. Not liquid.

Bluesgyrl I'm glad you asked the ? because I have no idea where to get maple sugar besides ordering off the internet - my friend says she saw it in Vermont where they are all maple-y but I haven't been able to find it here in Buffalo, Ny. I just found the Umeboshi plums paste and vinegar and I'm excited about that, she has really good recipes and healthy too.

Craftycat ~ concerning the agave nectar, my thoughts are "when in doubt leave it out." Almost like guilty until proven innocent. Why risk it if you think it may not promote health? I've never been a big sweets eater so have not done much research on it but if you have reservations, just don't use it. If you find evidence to eliminate those reservations then give it a try. Listen to your instincts!

Today on AOL's homepage there is a link to an article on agave sweeteners, and also on Huffington Post's home page. Agave doesn't come out smelling so good!

Yes, I think it is especially important for people who have specific health issues. Even though I don't, I have steared away from the agave.

I went to Whole Foods yesterday to find the maple sugar and like someone else said(sorry can't remember who) they were all out.I did see that web site of the lady who sells it on line. In fact, it may even be the lady who sells it to Whole Foods. The one at Whole Foods is Aunt somebody.

Instead I bought unbleached organic cane sugar. Alicia (The Kind Diet) says that you can replace the maple sugar with it but says it's better to use (health wise) the maple sugar (less processed).

Wild4stars Im with you on the sweet tooth thing. Im not big on it either. I do like baked goods such as bread, scones, etc. However, I have a 10 year old daughter who loves the sweets. So I am trying to encourage her to eat vegetarian and show her that sweet stuff can be made in a healthier way. I already made the brown rice treats (Like rice crispy treats) and they were a big hit!

Keep the sugestions coming. They are appreciated.

I got granulated pure maple sugar at Whole Foods. The brand is Shady Maple Farms. It is organic. It was on a bottom shelf right next to the brown rice syrup and barley malt. I almost missed it.

Thanks for the info. Dollgirl. Actually, my last trip to Whole Foods I did see a place for maple sugar but there wasn't any left. Must be some commodity!

I wanted to make the peanut butter cups in The Kind Diet. Instead I ended up buying unbleached cane sugar as was suggested as an alternative by Alicia Silverstone. We'll see.

I am curious though...........is the maple sugar ground up like regular white sugar or is it in chunks like cubes of sugar?

It is not finely ground or cubed like white sugar. It is in bigger irregular granules. Kind of (not exactly) like granules in raw sugar packets.

Interesting. Hmmmmmmmm. Well, I will wait and recheck if it is available my next trip to Whole Foods. I do know that I looked it up on line and it was quite expensive. More expensive than the one at Whole Foods. However, I do not remember the quantities of each to compare.

Like I told Wild4stars the sugar would be used once in a while because Im not that into sweets. So, I don't want to go buying a bucket full.

If anyone makes a trip before me, perhaps you could check it out.

I did make the Peanut Butter Cups from The Kind Diet over the weekend. I think I said earlier that I useed organic, unrefined cane sugar. They were very rich but delicious! The chocolate on the top does not spread the way it is shown in the picture. My daughter loves them............A big hit in this household.
