I am. I have done the kickstart before but was not 100% successful. I've worked through a lot of the issues that came up and I'm also planning to use the forums.

I can't wait!! I've been at it since 1/1/11 and I keep trying new recipes. People are starting to tell me I look good (lost 30 lbs). The forums are the best! I saw Dr. Barnards show on PBS and I said "I'm going to look as good as the 'after' picture of the woman on his show!

I'm ready. I've stayed on the vegan path but I've sure been eating some vegan junk and way TOO MUCH FOOD. Need to get back to low fat healthy vegan !!

This time this kickstart is necessary. I always enjoy it and meeting new people, this time I need the health and variety of foods/recipes to feed my mother who will start chemo any day now.

Thank you! It is a very scary time and this cancer (synovial sarcoma) is very aggressive (and rare) and has spread nearly up to her knee (started near the ankle) and has metastasized to her lungs. She isn't concerned with the probability of an amputation above the knee, but really wants to continue life.

So with that in mind, even my most of the time grumpy stepfather is not interfering with the food I am feeding her.

So for now it is healthy vegan whole foods, no microwaved anything, juicing, etc...

I am starting over. I have to. After screwing around with my diet, and eating junk yesterday including pastries, my fasting glucose yesterday at noon was 149. I waited a couple hours and tested again. 151

It was 87 by late afternoon, but those high levels are unacceptable. And dangerous.

Have you tried some of the muffins or vegan goodies? They take care of my sweet tooth and are satisfying.

This will be my first time, and we are making a documentary about it so I have been practicing for a few weeks. I am not the subject of the doc, so I didn't think it was cheating too much. I just wanted to be familiar with things when we start shooting.

I just tried the quinoa pilaf. It is really good, and reminds me of Chile (where I lived for 8 years). I always thought that cumin and oregano was an odd combination, but in Chile it is as common as salt and pepper, and of course quinoa is from that part of the world too.

It took me three tries to get the southern beans and kale right... it was just learning new ways that held me up. I am a good cook, but it didn't occur to me that I was using too big of a pot, so the water wasn't enough for the surface area and I just ended up with a big mess. My first attempt I didn't bother to measure the kale, so I ended up with a big green mess Smile The third time it was fabulous!

Last night I tried the bbq mushrooms. They were very good too, but it strikes me that they would make a light evening meal... maybe my source had a missing line for that day's meals. Very good recipe though, but if that is all I get for dinner I might add somethingSmile

Those who have done this before, when does the new forum launch?

I haven't posted for a couple of weeks but Im still here and excited for the next kickstart. I have quoted Wild4Stars as that is me to a 'T'. Stayed vegan since January with only the occasional slip-up, eating too much vegan junk (e.g. found some vegan chocolate bars that taste better then the non-vegan variety) and way too much food. I'm going for low fat vegan and portion control this time

I've learned one can be totally vegan and still eating the wrong things for type 2 diabetes. Sandwiches have been a quick and easy meal or snack for me, but I am discarding all my bread. I'll substitute vegan soups, which are far better nutrition and don't send my blood glucose through the roof.
