Home made Corn tortillas

Corn tortillas:
Maseca (ground corn) Safeway has it, but less $$ at a Latin store
Water
Lemon or lime juice
salt
can add seeds or herbs

For 2 or so tortillas, I use about 1/4 cup Maseca, just enough liquid to make a firm dough. Maybe a good tablespoon of lemon or lime juice and the rest water. I toss in just a pinch or so of salt. There is a recipe on the back of the bag with exact measurements.

I use a tortilla press. I don't like the aluminum one, I get the heavy iron one. Roll a bit of your dough into a ball about the size of a golf ball. I split open a large ziploc bag and press the dough in between the plastic (I line the press with the plastic and place the dough in between the layers. of ziploc) After pressing, (you don't need a lot of pressure) if you peel off the top layer of the bag, and lay the tortilla across your hand, then slowly peel off the the other layer.

I cook them on a hot griddle. Personally I use a comal which is just a thin metal griddle. Again, I purchased mine in a Latin store. I lay the tortilla flat across the palm of one hand, starting at an edge, above the comal, I sort of roll the tortilla off my hand on to the comal. I believe there is a video on the web that shows this process.

I also use a tortilla warmer to keep them warm until they are all done. All said and done, my Maseca, press, comal, and warmer cost about about $35.00. A bag of Maseca runs about $3.00 - $6.00 depending on where you purchase it. It lasts a long time and they are wonderful! Enjoy.

can you actually take these and wrap them like a burrito? and do they keep in the fridge once you cook them? do you fry in oil? or just a non-stick?

They are pretty much the same as the store bought as far as storage and such. They are a bit thicker, you want to keep them stored in something that retains moisture. I prefer mine fresh so I make smaller batches. I like that I can add my liquids and seeds and such for added flavor/nutrition. Somehow, so many things just taste better fresh!

As far as wrapping like a burrito. These are corn, so that would be one difference. Unless you get a really big press, they may be a bit small for burrito making. Awesome tacos though!

thanks for replying.. one more question.. do you know how to make tostada shells??? love those things.. the ones in the stores are not healthy at all..

I have seen the metal forms for them. I think some are fried but I imagine they could be baked. I have never made the hard shells, but I have cooked the tortillas long enough to be crispy for a tostada type meal. Delicious!
