cravings and substitutions

I am trying to be vegan mostly out of concern and care for animals. However, I must admit sometimes I miss certain foods. I am craving a family recipe of baked breaded chicken and am looking for something that may satisfy me without actually eating chicken! Help !

Based on personal experience, you can find a vegan recipe to replicate pretty much every craving! Pick up the cookbook "Vegetarian Meat and Potatoes" for when you're missing home cookin' and you'll be happily surprised at how well the recipes replicate the comfort factor without all the guts or guilt.

I have the Meat and Potatoes book from the library now. I haven't had time to try much, but it looks good.
I have been making "crispy chickenless nuggets" from happyherbivore.com. My two youngest kids love them (they have always been vegetarian, so have never had the real thing). My omni husband seemed to like them too - he ate several of them, but never actually said that they were good. Her website looks like it has a lot of good recipes, many that make standards low fat and vegan.

I bought a vegan 'tuscan chicken' and thought it was really good. Husband didn't care for it though. I try not to eat the processed items much, but was in the mood for something different. I don't remember the ingredients, found it at Safeway.

A helpful trick with cravings is to sort out what is it about that item that you think of when you think of it/crave it. Is it the crispy? the seasonings? the texture? the 'comfort food' aspect? If you can zero in on the aspect(s) that are calling to you, it can be a helpful step in finding ways to meet those specific things without the whole item. For instance, sometimes I just really want nuts - but I'm also likely to go overboard with them and they are higher in fat than I'd like. It's not so much the salty (we rarely get salted nuts anyhow), it's the toothy texture, not quite crunchy. I've found that a handful of cooked chickpeas has almost exactly the same texture as a handful of roasted peanuts. Low fat, high protein, high fiber - yippee! Now we just keep a jar of cooked chickpeas in the fridge to snack on - and we're working to perfect the timing on roasted chickpeas for a crunchier option (the first batch we did got a little overdone - hubby liked them but it was akin to crunching on the leftover at the bottom of the bowl popcorn kernels).

Have you tried Gardein? It is a meat analog, can be found in faux chicken and beef form. You can flour/bread/ then fry it. It is amazingly close to meat.It comes in "filets".
