What is your food today Mon Feb 7th?

Hi All,
Today looks like a shop and cook day. Finally i can be a little more prepared. I took all my favorite recipes and printed them out on designed computer paper, then stuck them in the plastic covers and put them in a 3 ring binder. So pretty and protected from the mess i make when i cook.

so i will be picking a soup and salad for the week here soon.. then probably a stir fry for tonight.

I have a stir fry sauce i really want to try. GARLIC-Soy Mix 1 TB water & 1 1/2 tsp cornstarch inn a glass 2 c measureing cup. Add 1/4 cup minced onion, 1/3 cup soy sauce, 1/4 cup rice vinegar, 4 cloves minced garlic, 3 TB Sesame oil, 2tsp sugar, & 2 tsp chili oil. Microwave till thick. (i wonder if i can substitue red chili paste?)
Anyway... my favorite take out was always beef and broccoli with a hot garlic sauce..I have a bag of Gardain beef tips...(inspired by lisa) So i will probably give that a go ...

**update** yumm. I usedlow sodium tamari, skipped the chili oil and put in korean garlic sauce and korean red chili paste instead. Also didn't use the onion in the sauce.. we had it in the stir fry.

l: spinach and tomato salad with mock tuna salad (chickpeas, onion, celery, 'beanaise') and a goodly handful of All Bran multigrain crackers

s: apple, cup of cocoa (organic fair trade but not vegan)

I also snacked on a small piece of leftover cake someone brought in from their Super Bowl party. Gotta get out to the grocery soon to restock the fruits & veggies for meals and snacks. Tonight maybe, if the weather holds off until really late tonight.

Vegetables: Dipped baby carrots in red peppper hummus I made yesterday. Otherwise I wouldn't have eaten them.
Had broccoli potato soup. Also had diced tomatoes/black bean/corn. I am trying to measure my food and see if I am getting four servings of vegetables per day. Do tomatoes count as a vegetable?

oh you are welcome... it is great to find someone who likes them or wants them...

Yesterday turned out great.. i did all my stuff around the house in the am, even exercised again.. feeling better, saw my honey for lunch.. got my list together, then went out shopping...

I got home just about the same time my honey got home from work! so we cooked together... we made the nutrion md cream of asparagus soup and morrocan chickpea salad...

we did make the stir fry.. it was WONDERFUL!!really like those beef tips for that dish.. we put in a green pepper, broccoli, baby corn, onion and mushrooms. A heaping pile of veggies.. thought we had too much, but we could have put in more.. (just a little like all the mushrooms insteadof 1/2the pkg)

and what was really great, besides the garlic sauce, is that i could have it over BROWN rice.. none of the chinese take outs will do that around there.. Also i had it just the way i like it... a little hot.. and very garlicy..Really like that dish and sauce..!

Update: steamed broccoli and brown basmati for dinner last night - my guys put a splash of soy sauce on theirs, I use a splash of balsamic vinegar across mine
