What's cooking this weekend

I think it is fun to read what others are cooking up. I otter get really good new ideas. So here goes. I will start. I soaked navy beans over night and this morning cooked them and set aside for various uses. My vitamix is getting a workout today. I already have made hummus and the easy bean dip for lunch today. I am also going to make a white bean dip with garlic that is terrific with raw veggies. Next I will make a mixed nut butter. I am ditching the bad peanut butter and making my own. The only ingredient: nuts. I figure a little bit every once in a while will be my 10% fat. When you make your own, a little goes a long way. At least that's my story and I'm sticking to it. I am also going to make a white bean and chard soup today. I will freeze some and have the rest on hand for lunches and snacks. Tonight instead of the stir fry suggested, I am going to clean out the produce bin and make my own stir fry. I think I have broccoli, carrots, celery, beans, zucchini, peppers, etc. Serve over quinoa, throw in some beans. Yum.

No cooking tonight, as my husband, mother-in-law and I are heading to a wonderful vegan restaurant in New Hope PA called Sprig and Vine. For lunch, we're having leftover African sweet potato, tomato and peanut soup; it's delicious. Tomorrow I plan to make a chickpea and zucchini saute with couscous that I found in the book "Supermarket Vegan." Tomorrow's lunch will be one of the bean salads from Dr. Barnard's cookbook. Hubby is having a hankering for some oatmeal raisin cookies, so I'm about to check out my extensive collection of cookbooks for a suitable recipe.

Speaking of couscous, I was recently on a cruise to Alaska (fabulous!!) and was served a couscous dish that was different to any couscous I'd ever seen. The couscous I use is made from very fine-grained whole durum wheat semolina. The cruise chef used a couscous that was much larger and was round with the texture of barley. The waiter didn't know what kind it was and I haven't seen it in the stores. Has anyone seen this type of couscous?
All we are saying is "Give Peas a Chance"

I soaked some dried black eyed peas overnight and cooked them up this morning, and thawed some spicey black beans that I had made another day. Tonight's dimmer will be Southern beans & greens and portabella mushrooms stuffed with a mix of the black beans, quinoa and diced bell pepper in various colors to make it pretty. To top off the mushrooms, I'll dice up some Roma tomato and green onion, and serve it with a smidge of vegan sour cream on top. I'm trying to cook up lots of flavor, trying to entice my husband to eat vegan more.

Mariberry, you are describing Israeli couscous. I have found it in the bulk section at my health food grocery. I haven't found a whole grain version yet but I hope such a thing exists.

Kids are gone. I am cleaning out the frig and my insides with a veggie soup. I keeping the beans on the side so I know I am getting enough protein from them. I am not a cheese eater. In fact, I pretty much dislike the stuff. But I do like a minestrone soup with a small sprinkling of parmesean cheese for flavor. Bummer.

Yes, there is whole grain Israeili or pearl couscous. I found it in Albertson's (here in AZ) - brand name was Rice Select. I made a yummy clean-out-the fridge salad for lunch. I started with 1 cup of quinoa that cooked in 15 minutes in 2 cups water, then added thawed frozen peas, corn, and lima beans (about 1 c. each) a can of drained cannellini beans 1/2 of a red onion, diced cilantro 1 chopped tomato 1 diced avocado (not trying to lose weight or I would have omitted that) 1 shredded carrot For dressing I stirred in 1 Tbs. of chili powder, 1/4 C. Newman's Light Italian dressing, and juice of 1/2 lemon It was delish!

I made the eggless egg salad today to have ready for tomorrow. I have to admit I was a bit trepidatious because I am a novice with tofu. This recipe it delicious! I sampled it on some of the Baked tortilla chips from yesterday. Yum. This on is a keeper. It is going up front in my recipe file.
