Sandwiches for the kids

Its hard enough trying to eat vegan for myself but getting my kids to join in is harder. Their lunches are the toughest. They completely dislike tofu and peanut butter and jelly is discouraged since children at the school are very allergic to p.b. What do others vegan mom's feed their children for school lunch and not get complaints?

My kids used to like mashed bean sandwiches. Be sure to season up the beans, it makes a great sandwich. 'Course, if they like pickles, lettuce, tomato, etc, that makes it even better.

Oh yeah, the mashed beans...
My nephews love this one:

1 can butterbeans - drained and mashed
1/4 cup nutritional yeast flakes
1 Tablespoon tamari

Send that in tupperware with some toasted pitas and shredded salad mix (lettuce, carrot, red cabbage....no seriously...)

In fact, my nephews spend a week out here every year, and have never once asked, "Don't you guys eat meat?"

My kids love hummus and will eat it on pretty much anything - bread, tortillas, crackers, veggies, etc. They'll eat pretty much any kind of bean spread/dip. Also, are your kids allowed to bring any other kind of nut or seed butter to school? My kids especially like sunflower seed butter and almond butter but there are a bunch of different kinds. If you can't find any other types of nut butters in your area, you can make them yourself if you have a food processor.
