I am very excited and motivated to get started on this healthy kickstart program. Like most of us I want to eat healthy and lose weight...about 18 lbs....in the process. The recipes look tasty. I am doing this for one as my husband works away from home during the week and is home on the weekends. I will miss my eggs, but I do not eat many animal/meat products. Can I assume that fish is out, too? I eat "gardenburger" products already so that won't be a big problem. I look forward to talking to my fellow kick-starters during the week. I wish you all much success and feeling healthy, energetic days ahead. I invite e-mails as I believe they help keep us motivated. Suzann

Thanks! So excited that it's starting up again. The support here has made such a differnce for me. My friends just gave me a belated Christmas gift yesterday. Two new cookbooks  The Kind Diet by Alcia Silverstone Vegan Yum Yum by Lauren Ulm Checked them out last night.......can't wait to try some of the recipes etc. Looking forward to sharing them with others on this forum.

When the meal plan says DIY it just means they're encouraging to create your own do-it-yourself meal with the ingredients listed. They'll explain more in the videos and emails as we go too.

I'm new to this too, although have been a 'semi' vegetarian for many years - semi meaning that I have bouts of eating minimal meat, chicken, depending on my energy level - I'm super excited to try a different approach, and am off to do my shopping after poring over the menus this morning!! One thing I am stressing about - I have a latte every morning and am loathe to give it up as I so love it. Has anyone found a good latte recipe using any (cow) milk substitute? Thanks, Jules

Hi Everyone, I am excited that I stumbled on this site! I have bought this weeks grocery list and excited to try te new recipes...My husband is even going to try some of the new stuff...I suspect one I get cooking he will be a lot more open to the meatless world! I have been Vegan since Dec 1, I was just going to try it out for a month, but really I dont think I will ever go back, I feel great and now that I am continually informing myself I think I will do great! At first I was worried that I wouldnt get enough protein for running, but I have read some great articles on awesome athetes that are Vegan! Good Luck everyone, and I look forward to meeting some great people here  Winter

This is for "cantoncat". I don't know how to get this reply to show under your comment. Be sure to READ the ingredients on those "garden burger" pkgs! Boca has vegetarian AND vegan options. Morning Star has some products that include egg/milk products. That's a no-no! Yeah, things get tough striving to become vegan! However, MS offers Meal Starter options "Chik'n Strips" and "Grill Starter Crumbles". BE CAREFUL! There are TWO versions of Grill Starter Crumbles - one vegan and one not. The front packaging picture is the same - you need to look on the back to see the "vegan" symbol. It drives me CRAZY to see these items on sale only to turn the pkg. over and see it contains milk/eggs. I've figured out the one small difference in the pkging. The front of Grill Starter Crumbles has a fat/nutrition display in the upper right hand corner of the pkg. The "OK" pkg. has an oval fat info vs. the "rectangular" one listing more stuff. Just look on the back of the "meat crumbles" in the lower right corner and you'll either see the vegan symbol or see the line that it contains milk/egg products. I think these vegan meat crumbles are very good! Just be aware that the Chik'n Strips, while very good, can get overcooked very quickly. I use a defrosted version to add to my salads, and add at the very end of other dishes that I cook.

Sunshine Kickstart DIY means Do it yourself- add those ingredients to see how you would like to cook it- maybe with water and garlic for the kale or using old recipes or making up new- you can look on the web sites provided for guidance if you need. It is basically to help you so that your not always relying on a recipe -add your own seasonings and soon you'll realize you can just throw things together. Hope that helps Someone asked about lattes- I have them every so often and you can get a soy latte at Starbucks and Borders or at home try using the silk soy creamers (in small containers diff than reg silk soy milk) or using the rice, almond, or coconut milks- people usually find their own preference. That being said try not to drink too many lattes. Oh one more comment on a post- you don't want to do lots of processed foods but Gardein, Fieldroast, and Amy's are also vegan options that can mimic and satisfy your cravings for meat/chicken etc... they taste really good and most people don't know they aren't eating animal products. Look in the healthy section of your grocers or at a health food store.

Hello, everyone. My vegan friend told me about this program and I signed right up. I'm not vegan or vegetarian, so this is a new beginning for me. I have high blood pressure and am overweight, so I am hoping for health gains in both of those areas. Would love to hear about any weight loss successes with plant based diet. I just finished making lunch - everything looks yummy. Thanks to the folks at PCRM for creating this program.

Hi All: After reading Alicia Silverstone's book The Kind Diet, I decided to try and see if I could do the vegan thing. I started on Feb. 1, 2010. For the first month, I have had a hard time giving up dairy and eggs. I also find it difficult to eat out w/o eating meat, so I have allowed myself to get fish whenever we eat out. Today I started the 21 Day Vegan Kickstart Diet. I am going to try and stick with the diet as it is written. Today we had the Couscous Confetti Salad (to die for-first time I've ever had couscous) and the Carrot and Red Pepper Soup. They were both soooo good. I have to say, they both took some time to prepare, but it was worth it. The recipes all tell the portion size, so that's what I ate. I hope I can continue to do this, as I feel so good already since giving up red meat and chicken.

Started the 21 day kickstart and I am on day two. I must admit that I was suprised that I made it through day one, but it was easier than I thought. I got some resistance from my eight year old daughter, but we managed. I have a lot of lifestyle changes to make and . . . a lot of weight to lose. Everyone keep your fingers crossed for me. BTW, I had the girls sit down last night and watch Food, Inc., huge eye opener and I recommend it for anyone (like me) who has resisted a vegan lifestyle in the past. Will check back in tomorrow and let you know if I have snapped.

I'm looking for the page that talks about the benefits of B12. On the front page, there is an icon that says "Learn more about the benefits of B12", but I can't find where it is. Do we get B12 from the greens?

I'm also wondering about some nutrition issues. I get my daily dose of vitamin B12 from a multivitamin, and I'm confident that I get enough iron (from spinach and raisins) and protein (from beans, peanut butter, and tofu). On this vegan diet though, my biggest concern is calcium. It says on my multivitamin package that it contains 25% of the daily requirement, plus I use calcium-fortified soy milk with cereals and coffee, and I understand there is calcium in tofu. Is that enough? Is there a good way to make sure I'm getting enough calcium - are supplements or calcium chews recommended? My mother and her brittle bones are giving me a hard time. Thanks!

I recommend a supplement or supplemented foods such as plant milks and nutritional yeast.

I have a question on protein.I don't think I am getting enough protein. I try to count how many grams I have had at the end of each day and it seems to be around 20 grams. I think I am suppossed to have around 45- 50 grams per day. I don't eat soy so I am eating beans, grains, fruits, vegetables and peanut butter. Any thoughts or suggestions?

Twenty grams is not very much. It would be hard to eat only 20 grams if you are getting enough calories. There is protein in beans for sure - 15 grams in a cup cooked. Whole grains vary for protein but with grains like brown rice, about 4.5 grams per cup cooked; quinoa has 8 grams per cup cooked; oatmeal has 6 grams per cup cooked. Even a cup of steamed broccoli has almost 4 grams of protein! I don't know your weight so it's hard to guess how much you need. But I'm guessing you are getting more than you think.
