My daughter and I have been trying to eat four servings of veggies a day, but it's hard! I just looked at the suggested menu and realize there are not 4 servings of veggies a day there. What are your thoughts on this? We are able to average two full servings a day.

Smoothies are a great way to get your servings in. If you match greens with fruits you can't taste the greens.

I have a side of steamed something or other with most meals.
My general rule of thumb is to have at least the same weight in veggies as I have in starches for my lunch and dinner.
I usually have an apple and a muffin for breakfast. It is hard to fit a vegetable into that, other than a smoothie to wash it down. I average 9 to 12 servings a day if you include all the green smoothie I drink throughout the day.

I do like a big salad for lunch that I add veggies to if you can get that in some time during the day there is 2-4 there and 2 veggies with dinner helps also. Are you counting 1C of a veg as 2 servings? Most of the servings of cooked veggies are 1/2C and greens are 1C packed per serving. Try to eat different varieties and colors but remember just because you ate 1C of broccoli and 1C green beans it is not 2 servings but 4, give yourself the credit for them.

For a way to sneak them in go to the "Cook Yourself Thin" web site [http://www.mylifetime.com/shows/cook-yourself-thin/recipes] and see how they add veggies to all kinds of goodies, just veganize the recipes to omit eggs and dairy.

I like that show "Cook Yourself Thin". I'm usually at work when it's on. Thanks for reminding us about them. Their substitutions are really surprising and clever sometimes.

I have to confess I am one of those vegetarians who doesn't eat a lot of vegetables. I've been more of a pizza-pasta-tarian. Here we are, Day 6 in the kickoff and my green count is pretty low so far (stepping away from butter and cheese is hard enough!)

I'm intrigued by the idea that fruit & green smoothies might actually be yummy. (I always imagined those tasted like grass.) I'm gonna have to give that a try!

Thanks for the ideas & support! I've been a junk-food-vegetarian for a while now and I want to be healthier, and thinner if possible.

How do you make a green smoothie?

My new doctor wants me to have at least 8 vegetable servings daily to include no less than 4 celery ribs.

here is my basic recipe (serves 2):

1 banana
1 cup of any vegan milk you like
1 tbs of flaxseed (optional)
1-1.5 cups of frozen berries, any kind
2 cups frozen spinach or fill the blender to the top with fresh baby spinach

blend

if you like it sweeter, put in a pitted date or two or a little bit of agave.

you need a powerful blender for this.

it sometimes comes out a funky color but tastes great--not at all grassy. i made one with cocoa for my mom and she would not believe me there was spinach in it!

celery can go in almost any cooked vegetable dish or soup. i juice it too, but your doc probably wants you to eat the fiber. Smile

you might also like "blended salads"--which is what dr. joel fuhrman calls smoothies made with veggies instead of fruit. they oughta help you get some of those servings in!

Chrisfisher- also remember that a fist size (put your hand in a fist position, that is the size your aiming for) is one serving. So most salads are 2-4 servings. A small plate with tons of dark greens and reds is a great way to get those veggies in.

Plus, I alway puree some sort of veggie to put in a sauce I am making. Example: Broccoli soup I add about two cups spinach and red potatoes (blended together in a thick soup base consistency) as a thickener. For a clear broth I will puree cauliflower and onions. For my marinara sauce I put eggplant. I always try to thicken up my ....whatever with a pureed veggies instead of flour.

Just note that you do eliminate the the fiber when you puree but not the nutrition.

Thank you all for the great ideas. It's easy for me to eat a big salad once a day, my daughter is just so picky. She's really been trying to get the veggies in though, these are some good ideas.
