Corn Muffin Recipe Question

Planning ahead and need help on the Corn Muffin Recipe for Day 10. Recipe calls for barley flour..can I use one of the following to substitute for the barley flour: Oat Bran, soy flour, Whole Wheat flour or wheat bran? If so, what measurement? I have these four items on hand. First week is almost over and my vegan MD is very happy!

I make a very similar recipe with oat bran instead of flour and a tablespoon of ground flax seed to assist in the binding.

It may seem too dry of a batter. If so, slightly adjust the amount of soy milk.

VeganRecipeGuy, when you add the ground flaxseed, do you add it dry? The recipes I see for it's use as a binder say to blend it for a long time with water, or to cook it to make it gooey. Still new at vegan baking and appreciate your experience!

Yes, the same with ground chia seeds.
To use them as a binder you want to soak them in double their volume in water and let them gel. You can speed it up by heating in a sauce pan until they thicken.
