Carb intolerance

I have been doing well on the plant based eating habits so far. However, I have to modify the menues so that they're low in carbs including the whole grain kind.
I have ADHD(Attention Deficit Hyperactive Disorder) whenever I eat starches or grain items I don't get energized at all... Instead I crash: My mind becomes foggy, my concentration decreases further, I feel weak and my hand-eye coordination suffers. It doesn't take a lot to make me this way, 2 slices of whole grain bread of one sandwich will do it!
Through trial and error I find that I function better when I get higher amounts of protein(lowcarb veggie sources of course) and getting a little Essential Fatty Acids from capsules. I take borage oil softgel caps 1 or 2 when I eat which is only a couple times a day.
I have always had this problem. Got my fasting blood sugar tested 3 months ago, it's in normal range. Infact all of my blood work is great. My weight is also in healthy range.

I read a book a few years ago...Sugar Blues. The author talked a lot about symptoms you are describing. The metabolic changes that take place in the body after eating starches are similar to those that happen after consuming white sugar...I forgot the exact details and science of this, but its one of the reasons diabetics cannot have large amounts of starchy foods, the body breaks them down and turns the into sugars, which in turn effect the entire endocrine system...all the body's regulatory systems can go haywire! Your body is smarter than you realize...its "protecting" you from all the starchy addictive junk we eat!
