QUICK and EASY mini meal

Microwave a sweet potato, (or for the pure-ists among us, pre-bake) depending on your calorie restrictions (or not) and sodium concerns (or not) add 1/4 to 1/2 mashed avocado, and 1-3 tsp low sodium soy sauce, , mash it all together in the skin of the potato, and you have an amazing "mini meal"..its loaded with fiber and vitamins, easy to make and delicious..add a salad and or cup of soup and you have a full meal! Just had a baked potato last night. But I put salsa, tiny amounts of butter, tons of onions, and green peppers on. Yum.

I like beans on toast for a quick mini-meal. And to be honest, it is the only way gluten free bread from the store is palatable.

Thanks for that sweet potato mini-meal recipe. When you first mentioned sweet potato with avocado I though "What the heck..?" but it does sound great - although I've never eaten sweet potato skin before. It's on my "to try" list for sure! Very Happy
