What is your food today Tues Feb 8th?

Hi!! Snow again.. this is the last day of it in the forecast for a while.. and only supposed to get 4-8 inches.. ONLY... anyway.. today is an easy one for me.. b-cereal l-cream of asparagus soup and chickpea salad d-left over stir fry or the leftover novicks power lunch. will probably eat the novicks lunch since it is the oldest.. s-various fruits... One thing... yesterday while shopping... i found a new food.. i never had a mango before... they were HUGE, slighly soft and 2/$1.00. so i bought 3. We cut into one.. perhaps it wasn't ready yet.. shouldn't the meat peal away from the core like perhaps a peach? it was soft.. not really sweet, not a lot of flavor.. some juice, not a lot.. is this ripe??? I remember the best apricot ever.. i bit into it and the juice just ran down the front of me! it was the most delious thing i had ever ate.. of course i went back and bought a huge bag!! that was when i lived in california.. and bought them fresh.. since moving to NY i have never found another one like that.. it is probably a good thing tho cause i have to spend that day and the next by myself outdoors..

b: usual l: leftover rice mixed with leftover black beans and leftover carrot-roasted pepper soup plus a tossed salad and a clementine orange d: not sure but hubby said he's making bagels today so we'll probably have some sort of 'sandwich' type thing (often it's black bean patties with ketchup and homemade pickles but it could be mock tuna salad sandwiches) s: apple, banana, another clementine --Deb R

I love apricots picked straight off the tree, never really cared for them until a year ago when I was in the Okanagan and saw apricots growing on the trees. I kept stopping at fruit stands and filling up on apricots. delicious. But you are right - they have to be eaten where they are picked. Like Ontario strawberries and Texas grapefruit.

And Jersey silver queen corn... pet peeve - the people at the grocery store who peel away half the corn husk to look inside and then just leave it sit there. People please! Once you pull that off, the corn kernels dry out and NO ONE wants them. Lots of mess and waste. Corn can be 'evaluated' by touch, sight, smell without shucking it. --Deb R

We love mangoes here. They are ripe when they are a little soft. I have had some that were either just bad, or I waited too long because they were brown inside. Last summer, I found large organic mangoes for 50 cents each, so I stocked up and froze them. They are good in salsa and smoothies (carob or cocoa, mango, frozen cherries, and water or plant milk - yum. I got this one from Susan or Lani). They are also good frozen right from the bag.

Dinner will be whatever I take out of the freezer. Just hope I remember to take something out. Probably lentil & mushroom soup. Today is the birthday of a distant cousin - William Tecumseh Sherman. Don't know an appropriate way to celebrate, unless I march down to Georgia and start a bonfire. That would be nice. Syracuse weather is grim today - cold, windy, snowing. Temp is dropping like a stone - 11 degrees and no bottom in sight.

bonfire would be nice...if we could dig out our firepit from under multiple feet of snow and ice! Despite the bagels (which are even now getting ready to go into the oven), dinner will be mac & cheese & peas (and I'll probably toss a salad on the side). --Deb R

Oooh, mangoes. I love them. That reminds me that I have been meaning to modify my favorite recipe for " turkey mango piccadillo" to make it plant based. I was wondering if a bland seitan, ground in the food processor might replace the ground turkey.Mmmmm. Something to think about. It is an old Weight watchers recipe that I made a lot back in the day. Loved the discussion posted today on the " vegan" label. I am too lazy tonight too post there, but I think I will call myself an herbivore from now on. I like that. Not as political as vegan and not as pretentious as saying " I eat a plant based diet.". Anyway, here it is: B. Oil free hash browns with spinach, peppers and onions. S. Cantaloupe and honeydew melon L. Leftover jasmine brown rice with beans, greens and veggies, Asian style (with teriyaki, Ginger and soy sauce), side of sugar snap peas (steamed, then chilled) S. McDougall cup of miso ramen. Banana D. (yum) seitan and pinto beans with onions and peppers, simmered in raspberry chipotle BBQ sauce. Served on whole wheat tortilla with shredded lettuce and crisp red peppers. SO GOOD.

thanks everyone.. pippin.. i haven't seen seitan in my supermarket...guess i will have to look for it.. i don't know if i call myself anything. I am just polite, answer people's questions.. also i like to talk recipes. i did it before the kickstart, and do it now. Many people have tried some of the recipes and like them. It's just chatting.. it's funny some people's reaction even when you tell them,no meat, no dairy and they say, "do you eat cheeese?" they just can't imagine going without it. I have to laugh.. gotta have a sense of humor.. "Nope, no cheese, no eggs, well maybe at the beginning in a baked good. Come to think of it, i haven't had eggs in weeks now. huh.. btw i made the best cream of asparagus soup the other day....." deb.. does your hubby make bagels like we see in the store? that big and thick? what flours? they must be wonderful because you guys seem to make them all the time! you might have to share the basic recipe? do you ever make muffins?

Nope - they're nowhere near as humongous as the storebought ones - those things are day's worth of calories! His are more "normal" size, maybe 3 1/2 inches diameter and an inch or inch and a half thick. Lately he's been making them kinda snail shell shape with little to no hole in the middle (more like a bialy but baked like a bagel) so that the fillings don't fall out the hole. He uses freshly ground whole wheat flour most of the time, though he occasionally makes rye or pumpernickel bagels(we have a grain mill and grind the wheat, corn, rye, etc that we use). I think the basic recipe is from the red & white checkerboard Better Homes & Gardens cookbook. They're somewhat similar to a pizza dough except there's more procedure involved - they get broiled quickly to set the outse then boiled shortly to steam the inside for that chewy bagel texture and then baked to finish the cooking. Yes, they are wonderful! We don't eat them so much May-September because it makes the kitchen a bit hot and steamy but it's wonderful in the cold winter months to add that warmth and moisture to the house. We rarely have actual loaf bread in the house (he'll make a loaf or two if we're having guests or something special happening), mostly we have bagels and tortillas as our sandwich filling platforms. Black bean patties, mock tuna sandwiches, hummus and veggie wraps, etc. Yes, we do make muffins. Our regular size muffin pan broke a couple months ago so it'll have to be mini muffins for a while until we can replace it. --Deb R
