Regarding what book I am referring to when talking about my sister Judy. The book we are using is Dr. Neal Barnard's Program for Reversing Diabetes. His plan basically is to go Vegan - there are many recipes in the back of the book. This book is really interesting.

What I eat for lunch is very simple - today for instance (I work) I brought couscous (this morning I used some of the water I boil for my morning coffee - 1/2 cup couscous 1/2 cup water (this makes a ton of couscous - in 5 minutes done)I found a lovely salsa with peaches and mango - I put a cup of that on top of the couscous - YUMMY! 3 dark rye crackers (big) - a 5 inch cucumber and an apple. I know its a lot but I need a lot. I eat another piece of fruit around 3. Even eating a mountain of food I am steadily losing weight. (29 lbs now) I sometimes throw together a hummus sandwich and eat raw carrots with it or sliced tomatos and always a piece of fruit. Often I bring leftovers from dinner which I make extra on purpose. I sometimes put tofu in a skillet w/frozen green beans and onions with soy sauce, garlic and whatever spices. Yummy! No recipe - recipes make me nervous - I cannot cook.
I may bring 1/2 of the broccli that I steamed at night with nutritional yeast flakes on it and fruit with a couple of pieces of pumpernickel bread. You get the idea the simpler the better for me. This sounds great. I really like the easy ideas. I will get the book. I wasn't sure which one it was as they talk about so many here.
