Susan has reminded us several times that PCRM does not edit the Celebrity recipes and day 7's Ginger Carrot Soup recipe reminds us why we need to exercise our own judgment when considering using any of them.

The recipe which serves 6 includes 1/4 cup of olive oil and 3 cups of coconut milk. Doing the math:

Fat in 3 cups of coconut milk is:

154 grams total fat of which 129 g is saturated fat

Fat in 1/4 cup of olive oil is:

54 grams total fat of which 7.5 g is saturated fat

Total fat from these two sources in the recipe is:

208 grams of total fat of which 136.5 is saturated.

Dividing by 6 yields the per serving fat =

34.7 g of total fat of which 22.75 is saturated

Thus calories from fat in one serving is 312 calories which would put you well over the PCRM recommended fat for the entire day.

I am sure it would taste good and its name sounds healthy, but don't mistake this recipe for a health food.

Sorry, the recipe calls for Canola oil; not olive oil. The total fat remains unchanged; slight change needed in the sat fat numbers.

No wonder it sounded so good. Sigh. Well, I'm going to make braised red cabbage ans chickpea cutlets. That also sounds good, and less fat. That's the great thing about being a vegetarian. There are so many great options available!
