Robin Robertson (of 1000 Vegan Recipes and Vegan Planet) has a new cookbook with exactly this concern in mind! It's called...Vegan on the Cheap. I do often modify her recipes--skipping oil, salt, etc. And she will occasionally use a packaged product like vegan sour cream, though she almost always offers a homemade alternative for those also. I read her blog and she mentioned she'll be sharing some sample recipes there soon.
