Try Veganomicon, also any of the vegan recipes in Linda McCartney's books, especially "On Tour". I also really liked the recipes in "Raising Vegetarian Children" by Vesanto Melina.

More recommendations in this thread too: http://21daykickstart.org/forum/messages.cfm?threadid=EAA8D927-9B94-1010-3A8443A5F49AE8AC I love cookbooks. 1000 Vegan Recipes (Robertston) and Veganomicon (Moskowitz & Hope-Romano) are my current two faves. I also love Vegan Planet (Robertson). I used to work for a cookbook publisher and have a pretty big collection of nonvegan (very nonvegan) cookbooks. I started to get rid of them, but then I realized as I learned I could adapt more and more recipes. That's been fun--I've used BBQ marinades meant for beef on homemade seitan, made shrimp salad without the shrimp, and veganized all kinds of stuff vegetables and casseroles.

I like "Eat, Drink, and be vegan" by Dreena Burton, and Friends of Animals puts out a cookbook called "The Best of Vegan Cooking" by Priscilla Feral (I like being able to support a charity when I buy things). Happy Cooking!!

I think the most "user-friendly" of my cookbooks is John Robbins's May All Be Fed.

"The Urban Vegan" by Dynise Balcavage. She also has a blog that's very helpful http://urbanvegan.net/ I've also found that Betty Crocker's vegetarian cook book is great. It's not all vegan, but there are lots of vegan recipes in it. Finally, Whole Foods' web site has a recipe section that has LOTS of great recipes. I've used several and have yet to find a clunker. Their Slow Cooker Chickpea and Lentil Stew is amazing! We serve it over brown rice. Just put vegan yogurt in at the end instead of regular yogurt.

I subscribe to "Vegetarian Times" magazine and they always have lots of great recipes. Not all of them are vegan, but I find it's really easy to "vegan-ize" (like non-dairy cheese/milk and using flaxseed as egg replacer). Of course, the bonus of subscribing to VT is all of the other great information you get with the magazine. -- Lisa

I'm also a fan of the Vegetarian Times. I like the recipes, articles, and the fact that they have an index in the back that marks which recipes are vegan, lacto, ovo, gluten-free, take less than 30 minutes, etc. so when I flip back through it later I can just start at the back and find exactly what I want.

I've got a great one called "Vegan Soups and Stews for All Seasons" by Nava Atlas. The ingredients are easy to find, recipes are quick to make and the final product is Y-U-M!!
All we are saying is "Give Peas a Chance"

Hey Rita, If "user friendly" means to you what does to me, it means few ingredients, simple to prepare, and sure-fire yummy. Am I right? My short list that fills the bill: Dr. Esselstye's Reversing Heart Disease Rip Esselstyne's Engine 2 Any of the McDougall books. As a matter of fact, you can find a quick list of linkable recipes at McDougall Health and Medical Center online here: http://drmcdougall.com/forums/viewforum.php?f=5 Check the top two announcements. Goldmine! These books are a good match for the PCRM guidelines of low fat. There is a high stack of other vegan books that have great recipes - Colleen Patrick Goudreau comes to mind, Alicia Silverstone...OK, THAT list goes on and on! Their recipes can be easiily adapted, for the most part, to PCRM guidelines. Enjoy what you eat! Lani

I just found the coolest thing on vegan lunch box's site...It's called "The Magical Loaf Studio" where you can create your own vegan dinner loaf by choosing ingredients from different categories, then a recipe is produced based on your choices! It's a lot of fun! Here's the link: http://www.veganlunchbox.com/loaf_studio.html Have fun!
