Hi,
So a few weeks ago i made freezer jam.. i picked strawberries, mashed them all up, combined with sugar & suregell.. then stuck it in the freezer..

the jam didn't harden enough.. it wasn't soupy.. but really quite nice..

That brings me to a thought...since geletin isn't vegan..i think suregell is... i would bet i can find a way to make fruit pies with it..like lemon.. or strawberry or key lime.. any thoughts???

Isn't tapioca vegan. ???
My cousin back east just slices strawberries and freezes them in a single layer. Then bags them up in small amounts for him and his wife. They take a bag out the night before and put in the frig. The berries get a little mushy. But are good. Smile
The next morning they have them on their oatmeal. It's yummy. Smile

Sure Jell has lactic acid which I'm pretty sure is NOT vegan. There are vegan jell products, I've seen them, but can't think of names right now.

I use arrowroot for thickening but not sure this would work in Jams. This is not something I have ever tired as I am not a jam eater - even before becoming vegan and getting into the low fat / no added oil side of things.
