Honey...

Hi All,

I have never been vegan and I am looking forward to starting this new journey! I can't wait to start the 21 Day Vegan Kickstart.

I have a question though...since Honey comes from Bee's...do vegan's eat it? Should I use Agave instead?

Honey is not vegan since it does come from bees. Agave is a great substitute though. Smile

Honey is one of those 'edge' cases where some folks who are 'vegan' do use it and others who are 'vegan' don't use it. Technically, it comes from a critter so it's not vegan.

Agave and maple syrup are both good subs. Molasses is a bit strong but is another plant-based sweetener. And, getting the least-processed sugar you can as well is a good idea - some things really need the chemical properties of sugar (crystallization for example) to turn out correctly. Agave never crystallizes, it won't freeze, etc. so it's kinda hard to use it for things like making an "ice cream" analog. Cookies and such don't brown quite the same. But, agave (and maple syrup) both work fine in baked goods, if you adjust the dry/liquid proportions slightly and do a test batch to check baking time to get them just right before presenting them to company.

I agree with those who posted in response to your question but wanted to add something that was shared with me at the last kickstart. It is an article titled 'how vegan'

This gave me something to think about as to how strict I want to be with my diet and why. I am definately no animal products including meat, fish, dairy, cheese or eggs but I do sometimes eat products that contain white sugar. This is another no-no for a strict vegan. In the end it is a personal decision.

What was interesting is that I decided to continue to eat/use honey but I have since lost my taste for it. Since becoming vegan and trying new foods and recipes I just dont like the taste now. It seems my body and taste buds have overruled my mind.

In addition to what has been said in previous posts, honey also has a high glycemic index. So, its not something we'd recommend anyway.

Other low-glycemic sweeteners like Brown Rice Syrup, Barley Malt and Agave Nectar would be better choices.
