Falafel?

I have this habit of buying things I think will be great to make, and then forgetting about them as they get pushed to the back of my cabinet. I would like to start using up a lot of those items...I have a box of falafel mix in the cupboard. Is it okay on this vegan plan? I know you usually fry it ... has anyone had success in cooking it in a less fat-laced way?

Scoop it out of your mixing bowl with a spoon and make little balls on a cookie sheet covered with parchment paper. (This makes it "non-stick" without the oil.)
Mash the balls a little bit so that they have the same diameter and thickness of a vegan chycken nugget.

Bake until crispy. (Start at 375 for 20 minutes)

If they come out a little dry, try processing a small amount of zucchini and adding it to your mix in the next batch.

Another tip is to flip them half way through baking if you want a consistent golden brown.

Great in a lettuce wrap with some sweet chili sauce, sprouts and shredded cucumber.

i bake mine too, adding a little extra moisture to the mix. i love falafel!

I've never made my own, but I love it at the mediterranean restaurant! sounds like something I'd definitely like to try and bake...

I like the frozen falafels. Put the frozen lump in a pan with just a smear of Pomace olive oil for each. Smash and flip with a spatula until done.

I've made them from the box, Fantastic brand, and baked them - delicious!

I love having lots of fixins for them like beets, lettuce, hummus, tahini, etc.

Falafel Patties
By Heather McDougall

These may be made ahead of time and then refrigerated or frozen until needed. We like these much better than the packaged ones!

Preparation Time: 20 minutes
Cooking Time: 20-25 minutes, in batches
Servings: variable, makes about 12 3 inch patties

2 15 ounce cans garbanzo beans, drained and rinsed
1 cup flat leaf parsley, coarsely chopped
2 cloves garlic, minced
2 tablespoons lemon juice
½ cup onion, chopped
1 8 ounce tub hummus (optional)
2 tablespoons flour

Place all ingredients in a food processor and process until well mixed. Place in a bowl. Drop by large spoonfuls into a non-stick griddle and flatten slightly with fingertips. Bake about 10-12 minutes on each side, turning several times, until golden brown. Remove to a platter to cool. They will firm up as they cool.

Hints: Be sure to look for hummus that does not have any added oil. If possible, look for hummus without added tahini to reduce the fat content even further. These may also be made without the hummus and they will still be delicious. Heather usually makes these about 2-3 inches across, sort of like a small burger.
