how can we now about the enough nutrition that we are getting from beeing total vegan?

Have you read any books on the topic? Perhaps The China Study. The question you are asking is extremely broad and there isn't a simple answer, but you can get every nutrient you need through plant-based nutrition - perhaps with the exception of vitamin b12, and vitamin d (which you can get through sun exposure, or a supplement).

I believe you can also get B vitamins by eating sea vegetables. Julieanna Hever has a video about on making noritos, basically a burrito with themed fillings (asian, mexican) and instead of a flour tortilla she uses a nori sheet.
