Things I learned this week

I posted this to my blog today, but I thought I'd put it up here and see if anyone else wants to list some things they learned in week one. It can be serious or silly (as you've probably figured out, I don't take things very seriously). Anyway, here's my current list: Things I've learned this week, while doing the vegan kickstart: 1) I need to trust my instinct on new recipes and make the changes I think need to be made 2) If you eat cold lasagna with a little vinaigrette, it tastes like pasta salad 3) No amount of blending will turn firm tofu into a dip 4) There is apparently no amount of salad that I can't eat, provided there's enough good fat-free dressing to put on it 5) The regular CSA box is just enough veggies for the week if I buy onions, and not quite enough fruit for the week and, most importantly, 6) It's as easy as I remember to eat vegan if I make sure there are lots of fruits and veggies in the house I'll be going into week 2 with a new CSA box tomorrow morning, so I'm going to try to use up the rest of this week's veggies tonight. I'll put the rest of the carrots into the stir-fry with the bok choy. I may make more soup out of the other butternut squash. I think that does it, if you don't count the eggplant and cucumber I bought last week (the cucumber will be salad tonight; the eggplant is for tomorrow's baba ganouj).
