Whole Wheat Angel Hair Pasta
Marinara Sauce
Steamed Broccoli

If you haven't tried Gardein (garden protein)Products they are wonderful. Their Buffalo Wings are spicey little morsels I'm totally addicted to!

You may have seen Chef Tal Ronnen on Oprah, he uses these products in some of his recipes. He has a cookbook called "The Conscious Chef." You'll find some of the products in the freezer section, some in the refrigerator section.

I made Dr. Barnard's vegan porridge in my crockpot last night just using a hodgepodge of whole grains I had in my cabinet (millet, buckwheat, spelt and barley I think, still for a total of 1 cup grains). Substituted one of the 3 cups of water with unsweetened organic rice milk, and used only 1/3 cup of raisins. My son and I woke up to warm, yummy, slightly chewy goodness. We added frozen organic blueberries to cool the porridge off, and he almost gobbled it all up before I even sat down with him! Thanks Doc! Very Happy

B: tea with sugar and aspirin (I had a migraine)
L: big salad (romaine, green peppers, grated carrot, kidney beans, grapefruit-sesame vinaigrette (see my blog for recipe))
S: vegan ginger cookie and steamed soymilk (at a cafe); orange (at home)
D: peanut noodles with kale
S: popcorn with salt; apple; piece of toast with sweet/hot mustard

Yesterday, this is what I had.

B - tea, bowl of cereal with soy milk

L- whole grain wrap with hummus (recipe from this site) with chopped tomatoes and cucumber. bowl of tomato soup (I was really cold)

D - fresh vegie stir fry cooked in sesame oil, served on bed of rice

I think that I did okay.

Friday

Breakfast: 1 slice toasted Dave's Killer Bread w/pb and sliced banana

Lunch: Last of the week's leftovers--black bean chili w/a sprinkle of soy cheese, baked tortilla chips, a lot of pico de gallo

Dinner: Baked potato--1/2 w/leftover hummus (worked great on the baked potato--thanks to whomever shared!), 1/2 with Earth Balance,vegan sour cream, and chopped tomato

Snack: 2 hard candies, handful mixed nuts, 1/4c granola

Oatmeal with blueberries, Dave's toast with jam for breakfast.
Rice biscuit with nuts for snack.
Vegan chili with hummus and cucumber sandwhich for lunch at a brewpub, water (no beer!). Surprised

Finding I'm eating similar things every day, but since I'm really picky and don't like to cook, I figure slowly I will find new things...at least I hope so!

Breakfast: 1 cup blueberries w/agave 2 packets McDougall oatmeal (part at 7, other at 10-I teach kinder and am STARVING by this time even on the weekend as I get up at 5-even on the weekned)

Lunch: 2 cups potato soup w/steamed broccoli thrown in

Snack: Huge salad of organic mixed greens (make it in an 8 cup tupperware), with a big handful of each: red cabbage and carrots, lots of cherry tomatoes 1/4 red bell pepper, some cucumber, slices of zucchini, and the bad part...Newman's low fat sesame ginger dressing 2tbsp...it's the only dressing I like other than ranch so...and I don't need to lose weight-although I know no oil is better...baby steps

Dinner: 3 corn tortillas, whole pinto beans, salsa fresca, a little guacamole, lettuce

I think I still need to eat more as I'm really hungry by snack, lunch, snack, dinner and I have woken up hungry. I don't love veggies that much or fruit for that matter but I am enjoying what I have been eating so far. Anyone else out there the same?

B: Fiber One cereal with almond milk & cinnamon
L: Kung pao veggies (takeout)(came with fried rice w/ the egg, so didn't eat that Very Happy)
D: Penne pasta with zucchini, mushrooms, tomatoes, garlic & spinach
S: Banana & roasted sunflower seeds.

Breakfast/lunch: If you can call that. Around 11:30 since I slept in since its a weekend.
tofu scramble-
It was amazing. Thanks to various people on the thread I started I knew how to get the water out. Then followed a recipe online.
A bannana
Glass or orange juice
Two bread with Jam

Forgot to grab food this morning to bring so I could have something to eat while reffing. Huge mistake. So hungry. After came home and right away made....
Dinner/ Lunch kind of..
A big huge plate of spaghetti.
Im going to make something to eat since Im hungry. A salad sounds pretty good right now.

This is yesterday's food; I got distracted and didn't post it.

B: toast & pomegranate jelly
L: Tofu, chinese cabbage, and leeks, with kecap manis, garlic, and miso
S: vegan muffin, decaf coffee with sugar and soymilk
S: Sandwich (tomatoes, avocado, sprouts, tofu mayo)
S: salted edamame
D: Roasted eggplant (didn't feel motivated to cook a whole dinner, and was feeling more snacky than dinnery, as is probably obvious from how many times I snacked), light dressing, raisins
S: Raisins

I'm new at this whole vegan thing... but I've been a vegetarian for almost 2 years and I wanted a new challenge... it's been interesting so far Very Happy

B: Banana + Blueberries Soy Milk Shake with ground flax seed and 2 whole wheat toasts.

L: Pinto Beans + Rice + Cubaces (a Costa Rican kind of bean) + Picadillo de Arracache (a type of root) and a very green salad

D: Guacamole dip and refried bean dip + Tangerine.

Sunshine squash pancakes for breakfast, with blackberries and agave. Soy yerba mate for snack. Ginger tempeh salad for lunch. Vegan Fruit Seed square for mid-afternoon snack. Quinoa Ginger Thai stir fry with mango for dinner. I'm stuffed! Smile

S: slice of whole-grain bread with tahini and an apple
S: vegan carrot-zucchini muffin
S: reduced-fat potato chips; vegan gummy snacks
D: tofu burgers on whole-grain buns with lettuce, tomato, onion, mustard, and pickles
S: raisins, salad, a bite of carrot

B-fast - 1 slice of whole grain toast with 1TBS pb
1 apple
Lunch - Big salad with a variety of lettuces, carrots, cucumbers, garbanzo beans, pine nuts, beets and lime dressing
Snack - 1 apple and air popped popcorn
Dinner - polenta with beans, corn, tomatoes and salsa on top and steamed carrots on the side

B - Cheerios, organic pumpkin flax plus granola, banana, and raisin bread with blueberry spread.

L - Almost-Instant Black Bean Chili and a few baked tortilla chips, and brocolli. I was stuffed.

no snack

D - Ethiopian tomato salad with cucumbers and raisin bread. Had ambrosia also (Really good).
Didn't care for the tomato salad, it probably would be better eaten in the summer.

For dinner I made the orange ginger bok choy that was demonstrated the other day. It was fantastic and so quick and easy. I served it with grape tomatoes and sliced tea smoked tofu (store bought).

I can't say enough about the bok choy recipe. I'm already planning to make it again.
