Hi! I've dabbled in the vegetarian/vegan world before, but never with any lasting success. But, I turn 30 next week and want to make some serious changes in my health and body. I read The China Study earlier this year and it has changed the way that I view food. I'm so excited to start this new journey for myself. Instead of talking about all the ways I will change, I need to just do it!

I'm glad for these kickstarts because last year I got easily derailed. I've been a vegetarian for 20 years but kicking dairy has been tough for me even though it irritates my system. This year I plan to stick with it, meal plan and cook more, get more sleep and more exercise. Healthier routines for a new year.

Looking forward to the start. Have had difficulties sticking with this lifestyle even though experienced definite health improvements with vegan diet in the past (diabetic). One of the difficulties is keeping my husband and kids away from my prepared vegan lunches for the week... Hubby is very supportive, but only in eating the food and not participating in the preparation!

This is my first Kickstart. I've been vegetarian for 7 months but have fallen into a high carb/high fat rut. Looking foward to getting back to eating more healthy whole foods. The recipes look great!

So what happens after 21 days? Am I thrown to the wolves to plan my own vegan meals? This is my first time participating, and will be my first time to make it longer than 2 weeks on a vegan/vegetarian diet.(crossing fingers that I make it past 2 weeks, but I am going to push through)Thanks

I am new to the kickstart,but have been vegan for the last 5 weeks. I am looking forward to the recipes, tips and support. I am hoping to make this new way of life as exciting as possible.

Hi Susan, Thanks for the welcome message and for doing this as part of PCRM. This is my first kick-start. I used to live in Houston but now live in New Zealand. While I may possibly be the furtherest away geographically I am very motivated. The old saying about "when a student is ready the teacher will appear" is true for me as I have 42 lbs to loose to get back to the weight I was in Houston and I just want to be healthy again. No meat is easy as I have been an overweight, addicted to cheese, not so healthy vegetarian now changing to a vegan diet. I just went through my pantry reading labels and was surprised at finding cream, butter and cheese in cans of soup plus other hidden ingredients. Wow - reading all labels from now on! My supermarket shopping may be slower but it will be healthier.

I am really confused. I was participating in the last forum and was surprised when it was withdrawn without warning. How often does this happen? Will this version of the forum also be deleted? When?

HI ChefCrae.. after the 21 days you will probably have compiled a set of recipes that will hold you over to the next kickstart.. But if you didn't . the forums remain up and active.. just not anywhere near as active as when the kickstart is there... you still get a response.. just not instantly. Kiwi.. i feel your pain with the supermarket shopping.. my hubby was at first frustrated with how long it took me to shop till i found brands that i wanted.. with no added sugars, or high fructose corn syrup, ingredients i understood, lower sugar.. I got him reading labels at home and he learned.. now i say.. "i don't have my glasses on, can you tell me if it's ok?" got him thinking... Checuchinican... forum deleted.. i see them all.. see the top where it says community forum? hit that. then you see all the kickstarts? I saw where you posted to the sept forum that you wanted to gain weight... wonder if it was just a fluke.. ?

I've failed my first kickstart before I even began!  I was going thru the pantry and freezer to see what I've got, what I need, etc. I realized I've got a bunch of stuff in there I either need to eat or throw away. Since I'm at near poverty-level, I've decided to eat the stuff in there and not do any major shopping until it's gone. So, my kickstart will probably be 2 weeks behind. So depressing. (I never heard about the PCRM or Kickstart until around 12/26, so, I guess I should be happy that there wasn't a lot more animal-based products in the house.) Fortunately, about 90% of the stuff in the house is organic and healthful. I haven't had cow's milk in about 2 years & I'm totally grossed out over chicken (saw the way it was processed about 8 years ago and haven't eaten since). I seldom eat beef or pork and never eat veal (found out what it was when I was 7 and haven't eaten it since). I like fish and lamb. That said, most of my diet over the past year has been vegie-based, with an occasional burger or lamb-chop here & there. I don't think I'll have a problem getting rid of the meat; like I said, I don't eat it often--which is why it was shocking to find it in the freezer. However, I can't seem to get rid of the cheese or the eggs. How do I do it? Although, I think my biggest problem will be the junk food and instant foods: tortilla chips and queso dip and microwaveable meals. Once I get rid of the stuff already in the freezer and pantry, I'll be able to concentrate on a vegan diet. However, what do I do for eggs? How do I make french toast (my fav sat b'fast)? I've discovered vegan cheese, so I think I can deal with that for the most part. However, I love blue cheese. Is there a vegan blue cheese? What about yogurt? Is there anything out there that tastes as good as regular yogurt? Can I substitute almond milk for soy milk in recipes? A flight attendant told me about almond milk in June and I tried it. I like the almond milk better than the soy. (Is this really the appropriate place for this post?) GRRRRRR! I want to do the right thing for my body to get rid of excess weight, lower my high blood pressure, eliminate my migraines, have more energy and just plain feel better, but it seems everything is stacked up against me! Anyone else feel like that? Thanks in advance.

Welcome teresa!!! we are so glad you are here! i understand your fustration on seeing food... and saying.. well if i go vegan i will NEVER eat that.. and i can't throw it away..it's food.. I understand because i have been really hungry before.. i once said that you are hungry when your stomach growls.. wrong.. I remember now that I was REALLY hungry when my stomach STOPPED growling. My husband remembers a time he had to sell stuff in the house for food; and then could only afford bread. so i understand about not wanting to throw away food. One thought tho.. if you wait to start.. then you need so much stuff you might consider "expensive" that you will buy what you can afford. My thought is do a vegan day or two or three by purchasing a small amount of things to add to what you already have. There are some things that last a long time, but are a bit more than the 'regular' food. Or you don't even have to buy the pricy if you go for the beans & rice. So try a new recipe..and not go for the whole shubang? Maybe a day or two and not a major shop? just my thoughts.. you have to do what is right for you.. but we will be here when you need us.. for planning or for recipes or questions.. best to you!
